Veggie appetizers/snacks
I have some friends coming in town (2 are veggie) so I need some snack ideas that are veggie friendly. So far I have hummus/pita and boursin cheese and crackers. Any other ideas?

mango salsa with whole-grain chips
guacamole
veggies & spinach dip (or you can do a bread bowl with spinach dip and have fresh baguette slices)
baked goat cheese, olive tapenade, caramelized onions, roasted garlic... with toasted artisan bread

spanakopita (spinach and feta in Phyllo) are always a big hit!

I have two great recipes. One is an asparagus dip, the other is a three cheese artichoke dip!

ITA this is a crowd pleaser.
Crudite wit a nice onion or ranch dressing is always popular and with the heat it is nice and refreshing.
Tzaki dip ( greek yogurt dip) is yummy with pita--also a creamy feta, hummus are all good

Spinach dip in a pumpernickle breadbowl always goes over huge by us.
Mini Falafels are a nice treat - serve with some tangy tzatziki or some lemon garlic aioli.
Roasted veggie salad requires a fork - but it's yummy and easy.
Sliced fruit with a yogurt dip is good for crowds and nice in the summer.
Cucumber finger sandwiches on cocktail bread are SOOO good and really refreshing.
Mini fried eggplant sandwiches are less light.. but seriously tasty - especially when you pair them with some fresh roasted peppers.
