Weekly menu plan 12/11/17
Sunday - pan fried blackfish, green beans, roasted potatoes
Monday - buffalo chicken spinach salad
Tuesday - black bean veggie enchiladas, corn
Wednesday - leftover salads
Thursday - leftover enchiladas
Friday - hot dogs, corn, roasted maple sweet potatoes
Saturday - out, veggie burger for dh

Mon - veggie burgers and fries
Tue - tofu and veggie red curry
Wed - chili over barley
Thu - salads with beans, avocado, artichokes, etc
Fri - alcohol

You have to check out my newest obsession, Cookie and Kate. Some vegetarian and lots of vegan recipes and every one we've tried has been so, so good! I've made her vegetarian chili, Thai red curry, veggie fried rice, sun dried tomato pesto pasta with balsamic roasted veggies. Trying the veggie enchiladas tonight.

We didn't love the enchiladas. I thought there were okay but dh said he'd much prefer his broccoli on the side lol. The other recipes we've tried have been so delicious though.
