We're back from Disney! UPDATED 4/11 w/a review and link to pics!
We had such a GREAT time! Grace loved it!
The weather was stinky...it rained every night and about 1/2 of every day we were there. Grace became very familiar w/her poncho
It was wonderful to hang out w/my dad and he loved spending time with Grace. It went better than I had expected and Grace was an angel with all the rain and crowds at Disney.
I will write a full review and post pics tomorrow. ALL of the character dining (Ohana, Crystal Place, Liberty Tree) that we booked were worth EVERY penny, IMHO. I have to work today and catch up on a bunch of stuff.

Ok, so when my dad wanted to take Gracie to Disney for her 2nd birthday (she was 23 months when we went) I was a little bit . I honestly thought there would be NOTHING for her to do there and GOD was I wrong! The ONLY thing that $ucked was the rain. It rained every day and night we were there. I highly recommend getting a poncho for yourself and the kids AS SOON AS you enter the park. IT was the BEST $6 bucks I spent down there.
Character Dining: ALL of the character dining (Ohana, Crystal Place, Liberty Tree) that we booked were worth EVERY penny, IMHO. They we ALL amazing and when I booked I told them that it my dad was taking her to Disney for her b-day next month. Well at all the restaurants all the characters & wait staff sang happy birthday and gave her a cupcake with a candle at the end of the meal. Grace was elated! I was apprehensive about the character dining due to the expense (even though my dad paid for everything), but it was the BEST!!! The food was not that of a 5 star Manhattan restaurant, but it was yummy. It was served family style and Crystal place was a buffet. The pineapple bread at Ohana....AMAZING!
The Parks: We went to Magic Kingdom, Epcot and Animal Kingdom (we only had 3 1/2 days there - no time to go everywhere else).
Epcot - go straight to the Nemo ride as soon as you get there if you have kids under 3. Everything else may be too old for them. Although, Grace did like walking around the countries. Nemo was awesome and the turtle talk w/Crush was hilarious! The turtle actually talks to the kids in the audience!
Animal Kingdom: Ok, so the safari was PACKED w/a 2 our wait. we decided to bag it and went on the Wildlife Express Train to Rafiki's Planet Watch. THIS PLACE WAS AWESOME!!! The kids can brush goats and touch them, see pigs, donkeys, etc. Also take pictures w/ characters inside the pavilion. Grace loved it and it was just her speed being a 2 yr. old. The safari would have been great, but I know my kid and a 2 hour wait would not be good. We would have fast passed it, but fast pass was for 5PM and we had to be at Liberty Tree at that time for the character dinner. Also the dino dig in dino land is great for the under 3 crowd!
Magic Kingdom - For the under 3 crowd...go directly to fantasy land and Toontown. We went on small world (her favorite ride), Poohs adventure, Peter Pan (she was a little scared for a second, but got over it), Ariels grotto (where there is dancing water for the kids to coll off), poohs playful spot, mickey's house and judge's tent, Dumbo ride, tour of Cinderella's castle, went on the train the goes around the park, the boat to Tom Sawyer's house, the Enchanted tiki room, the jungle cruise, etc. She had a BLAST at MK.
I guess the only advice I would have is: 1) buy a poncho, bring suncreen, bring water and snacks for the kids. Bring your own stroller. 2) book character dining (knowing that it will be loaded with kids, the food will family style and good but not 5 star. (Go to Wolfgang Puck's place in Downtown Disney if you want that). However, You kids WILL LOVE the characters and the look on their face...worth every penny! 3) You will spend most of our time at MK 4) Be flexible. You may need to decide not to go on certain rides b/c of wait times. Don't push the kids to go on everything. We did that w/ Grace ONCE and she had a complete meltdown. Trust me, it is not worth it.

Just curious about the bring your own stroller suggestion, can you elaborate? Are the park ones no good or hard to find?
hard to find if you are not at the park as soon as they open
