What can I make with Dill?
I accidentally bought a bunch of fresh dill. What can I make with it (I'm vegetarian)? I looked up some recipes and all I saw that didn't involve meat or fish was tzatziki sauce....

Potatoes, either roasted in the oven or mashed. Love dill on potatoes!

My favorite is in tzatziki sauce, or in greek salad/greek salad dressing. Like dill and feta cheese taste good together.
I also love orzo pasta with lemon and dill. You can make this as a pasta/side dish. But there are soups you can make with orzo pasta, lemon and dill. It's like the greek chicken and lemon soup, except omitting the meat and making it vegetarian style.
I think it is used in some spinach dips- like the kind that you'd put in a big bread bowl.
I also love it on roasted potatoes. I usually like the small red or fingerling potatoes and throw some garlic, dill, salt and pepper on there. Delicious.
You can also use it in any veggie pilaf (like couscous, or rice, or millet, or quinoa) mix it with vegetables and add the dill. It would probably be good with some feta cheese or goat cheese crumbles mixed in too.
I've also put it in corn and beans salads in the summer when I have a lot of dill leftover from something else. It tastes good with corn and beans.
You could also pickle with it- dill pickles mmm

You can always freeze it too.

spanakopita ( spinach pie!!) sooo easy
you can use crescent rolls or any dough instead of FILO ( which you can find in every supermarket now for under $4)
all you need is butter, feta cheese, spinach, dill and a few eggs )
mix the spinach ( CHOPPED, frozen spinach - i use white rose- they come in frozen blocks), feta cheese ( domestic cheap feta is great), a LOT of dill, and about 5 eggs. mix them all in with your hands
- make sure the spinach is defrosted and you squeeze out all the excess water)
butter the fillo dough or crescent rolls top and bottom and bake 350 degrees til the top of the dough turns golden brown

Um, this sounds amazing and I'm totally making this one night this week. Spanakopita is one of my favorite foods but I've always been too intimidated to try and make it! Thank you!
OP, I was going to say lemon potato salad with dill, but now I vote for this

with the spanakopita, leave small chunks of the feta when you mix because the cheese melts and you wont taste the salty goodness once its baked.

Dill is such a staple in many Russian/Ukrainian dishes.
Pan fry some potatoes and toss some dill and fresh, crushed garlic on top (you can do the same with boiled, new potatoes)
Salad made with cucumbers, tomatoes, onion or scallion, radishes, and dill. The dressing is just spur cream and salt. Mix it all up.
