What do you cook and freeze for easy family meals?
Im returning to work FT after being off for 15 months and I am trying to think of what I can cook and freeze to make our lives a little easier and to have more time with DS.
Today I cooked a big pot of chicken soup, was able to freeze 5 containers.
Next week, I will cook a big pot of sauce and hope to freeze some of just sauce and also make some small trays of ziti.
I may also make some lentil soup and pea soup.
Besides soups, what do you have frozen?

I make meatloaf which I freeze. I've also made some stir-fry and frozen it, it freezes well. I' ve frozen lentils made with sweet potato and also beans (black,red, kidney beans, etc). You can also make some taco/burrito filling with ground meat and freeze that so that if you want a taco night you just need to defrost the meat and add whatever fillings you like (lettuce, cheese, tomato, etc).
