what is the secret??
How come the cheese only baked ziti that you can get in the store is like a brick and mine just falls flat? What am I doing wrong?

Do you put eggs in your ricotta? That helps bind up the cheese when it cooks Just an egg or two depending on how much ricotta you are using

what kind of cheese are you using? When you say like a brick, do you mean it stays together as oppose to falling apart when serving?

What I do is cook the pasta and then I mix the ricotta with the pasta. I never used egg. Perhaps that is what I am missing. I then mix in spices, sauce, and motzarella. I lay slices of motzarella on top. Am I missing anything else besides the egg?

I use the egg in the ricotta, and I also use shredded mozzerella too in the pasta, not just on top

I make a cheese mixture....ricotta, Mozzarella, egg and some parsley, I mix that and some sauce in with the pasta, pour it in to my baking dish, add more sauce then top with mozzarella

I always add egg to my ricotta. It definitely stiffens it and it doesn't run.
I use ricotta, egg, mozzarella, parmesan cheese and parsley for the middle.
