what new recipes have you tried since the quarantine started?
have you tried something you've seen on tv/internet? have you created something new with the ingredients you have on hand? have you tried something out of your comfort zone?

Re: what new recipes have you tried since the quarantine started?
In the beginning of quarantine I made my usual irish soda bread for St. Patrick's day. But then I made this cake from the leftover buttermilk:
Buttermilk Cake
It was easy and DH devoured it. My DD liked having it for breakfast lol.

We made a bread without yeast (it was actually really good) and Skinnytaste’s bagel recipe (we didn’t like this one at all).

I made this tonight because I had buttermilk that we going to expire and it was delicious. I didn’t add any nuts because my husband is a pain in the @ss with that, so it turned out similarl to the Louisiana Crunch cake.
Delicious!! Thanks for sharing

Re: what new recipes have you tried since the quarantine started?
I think I haven’t really tried anything new, but I’ve been at lot resourceful to use up stuff in my pantry.
One thing new I tried was chocolate microwave mug cake.
I also tried some new recipes for pasta. I like to make my own ravioli and I made a shrimp mushroom ravioli with a lemon cream pesto sauce. That was pretty good and I plan to try it out one regular pasta.
I just try to buy some veg in the supermarket and see what I can do with that. So, for example, I bought a lot of spinach and mushrooms. I’ll combine that with some eggs. This week I have asparagus and potatoes. I’ll see what I can create with that.
I also have a ton of Asian condiments and made a nice chicken yakitori and ramen eggs with a salad and that wonderful dressing you get at Japanese places. That was really good.
But I kind of have a talent with making stuff out of nothing since I have been trying to save money.

Girl... All week, my crazy DH was singing “sticky cake, sticky cake, oh how I love you”.... to the tune of “Smelly cat” from Friends. Every time he was going to eat a piece lol.

Re: what new recipes have you tried since the quarantine started?
My sister bought me an Air Fryer for my birthday and I love it. I made empanadas and it was so much easier. Yesterday’s I cooked baked potatoes and chicken tenders, best chicken tenders I’ve made!
I always used a frying pan, and it was just too oily or the chicken would get dried out. The chicken was cooked to perfection, nice crust on the outside and juicy on the inside!!

Same... and I don’t have much counter space so I decided not to get one. But I’m so glad my sister got it for me.
I got it last Friday and used it twice already. The best thing is it makes cooking so easy. My DH who only makes cereal and eggs, was able to cook the food. I seasoned and breaded the meat, but all he had to do was set the temp, timer and pop it in. The potatoes, clean, Polk holes with a fork, pop it in the air fryer.
It so worth it and so much less oil!! Sorry lol!
ETA: This is the one she bought me and it’s so easy to clean as well. It also came with a small recipe book. Gourmia Air Fryer

what new recipes have you tried since the quarantine started?
I went plant based in January so my recipes don't really interest anyone, but I did put my 10 year old on pinterest and we find recipes together and then make them. She doesn't have a very sophisticated palette, but we've made: Pancakes from scratch (banana, choc chip, apple cinnamon) Penne Alla Vodka Chicken meatballs Grilled Cheese hotdogs Cinnamon rolls from crescent rolls Salami & cheese baked in crescent rolls Cheesy rice (i call it the poor man's risotto LOL) Parmesean crusted chicken tenders Chicken quesadillas Roasted potatoes She's learning to use the stove, oven, air fryer, mandolin, how to chop, mix & season. We make it fun- I ordered us Chef hats on amazon and we narrate our own cooking shows. She's also trying to expand her palette a little- she ate salad! LOL

That’s awesome! It’s great when children learn to cook. It really is a necessary skill.

One day I'm going to try these in my air fryer. For now, I'm snacking on plain popcorn, baby carrots, and fruit.

Chickpeas are basically the only reason I actually keep my air fryer. They come out perfectly every time.
