Re: What the heck do I do with all these breasts?
I usually buy in bulk and then I separate them and put like 4 breasts in a ziplock with a different seasoning in each bag and then I freeze them.

Re: What the heck do I do with all these breasts?
We always buy in bulk like that. It's easier and cheaper I break them up into serving size packets and freeze individually

I freeze it -- in packets containing 2 servings -- and defrost / use as necessary.

Re: What the heck do I do with all these breasts?
you could slice them up real thin, slather his butt with mayo, and throw slices of chicken at it. You are awarded points for both sticking and placement. Good times for all.
eta- this does work better with baloney slices- tell him to bring that home next.

Re: What the heck do I do with all these breasts?
I was gonna say....you know I've offered to handle yours
definitley break them up (wrap with foil and store in tupperware)
leave some out to grill up for dinner...make a dressing out of vinegar, dijon mustard, olive oil, salt and pepper (maybe some garlic or shallots if you have) and let sit for a bit to cook in marinade..
or salt and pepper chicken, grill, then toss with dressing, tomatoes, cooked and chilled pasts, and other chilled veggies for a yummy pasta salad

Re: What the heck do I do with all these breasts?
I usually bread them and bake them (healthier than frying) and use them for lunch and/or dinner all week. Chicken cutlet sandwich for lunch and Chicken Parmesan for dinner

Re: What the heck do I do with all these breasts?
Definately split them up and freeze. I made this last week, and DH went crazy for it (he even ate leftovers the next night which he NEVER does!)
pound chicken breast to flatten
use any spreadable cheese that you would find in the deli section where the cheeses are (I used garlic and herb cheese) and spread evenly ontop of chicken.
Roll up chicken (like a jelly roll) and secure with toothpicks.
Season Chicken with salt and pepper (I use a little paprika as well)
spray chicken with nonstick spray
Roll in: (use anything you like, breadcrumbs, corn flakes, etc...) Since DH follows an Atkins style diet, I took almonds and ground them up with my handheld mixer thing. Roll chicken into mixture to coat.
Place in a baking sheet in a pre-heated 375 degree oven for 30 minutes (or until chicken is cooked).
once out of the oven, remove toothpicks and you can either slice it up, or serve it as is.

Re: What the heck do I do with all these breasts?
we always buy in bulk like that... we freeze like 2 or 3 peices ( depending on the size in a freezer bag.... then we jut take one bag out for each meal. they last for awhile in the freezer and you can make tons of stuff with them- bread them, slice them up for fajitas, chicken stir fry, wtih some crushed tomatoes and peppers for chicken cacciatore... anything like that. have fun!!

Re: What the heck do I do with all these breasts?
I have you all beat! DH is in the food industry & brings me home 40lbs...That's right 40lbs of chicken cutlets!!! Since that is all we eat, I split them up & store in ziplocks in either (6,8 or 10 breasts). They go in the freezer & I defrost as needed.
