What type of dessert items can I make ahead of time?
I have DD's christening next saturday and I would like to make some cookies and bars but not sure what freezes well. I would have to bake it Friday but I am sure it will be fine over night.

When I make brownies or cookies they usually stay soft for almost a week, maybe longer but they never last in my house that long. I would think you can start baking Wed or Thurs and it will still be fine for Sat.

I also heard if you make cookies and put a piece of bread in the tupperware the cookies take the moisture from the bread and they remain soft for a couple of days,

Rainbow cookies freeze well. Brownies last a long time also.
