Whatcha eating?

We should have one of these threads on here to get meal ideas!

This morning I had an egg white omelette with mushrooms/onions and a little bit of reduced fat Mexican blend cheddar on a whole wheat tortilla. (SOOOO good.)

Right now I'm eating homemade Gaspacho. (Refreshing!) and for later I have a Chobani and baby carrots with roasted red pepper hummus.

Tonight I'm making Asian salmon with broccoli and brown rice.

What are you having???

Re: Whatcha eating?

morning-2 cup of watermelon and a chobani 0%

lunch-tofu and egg salad
(one of my cold faves nowadays. I boiled a dozen eggs and discarded half the yokes and cubed a block of extra firm tofu and mixed with about 4tbsp of lite mayo.) It's a great make ahead meal and very filling and high in protein.

dinner-poached chicken breast and green salad

snack-1/2 cup fiberone cerael for the crunch munchies
