what's a good marinade for grilled chicken
Want to marinate some chicken breasts and then grill them. What's a good marinade for this? Something that will make them really flavorful and juicy. Hoping to grill extra to then keep for leftovers later in the week.

I usually just marinate chicken in salad dressing... italian or caesar. It comes out very juicy and yummy!

my "go-to" is one part balsamic vinegar, a small tsp of dijon mustard, a small squeeze of honey, a chopped garlic clove, and one part oil. always a hit.
I also do one that I like with either the juce from a lemon or lime, honey, oil, salt, pepper and either fresh basil or time. garlic doesn't hurt either!!!

this is my go to marinade.. w/o the honey.. comes out deelish all the time.
i also do one with yogurt, garlic, salt and pinch of cayenne.. yummy as well..

i use light italian dressing with 2 chopped up chipotle peppers with some adobo sauce.
i make this about once a week great leftovers

I use this for my chicken and shrimp. You add water, oil and either white or balsamic vinegar. I add the balsamic and it always comes out so good.

Right now, Ken's Honey Terriaki marinade is my favorite.
I am going to try Ophelia's balsamic, honey marinade next week...that sounds delish!

Honestly, you can put anything on the chicken to marinate it and it will come out juicy every time... IF you tenderize the chicken breasts first.
I always wondered why the grilled chicken at my mom's house was always so incredibly moist. Then I asked my mom what she did and she told me she tenderizes the chicken breasts before marinating them. She pounds the daylights out of them! Makes them more even in terms of thickness. Not to flatten them, but to loosen up the meat.
We just had grilled chicken breasts last night marinated in italian dressing and they were AMAZING!!!

My go to is Balsamic, EVOO, minced garlic, dried basil or oregano, and S&P.
Here's another if you like Indian/Middle Eastern flavors, and best if everything is fresh and it sits overnight (sorry no measurements, I just eyeball):
yogurt squeeze of lemon juice cumin powder coriander powder minced fresh mint leaves minced fresh cilantro grated ginger or paste minced or crushed garlic green chillies OR red chili powder salt
You can cube and put on skewers too. Juicy and so moist especially because of yogurt and lemon juice!

I made this instead of the Tequila Lime chicken I had planned.. I wanted a change (and I didn't feel like making pico! ).
It was fabulous! The kids and the hubs loved it and ate it all up. I used Sherry Vinegar and a little extra honey because I didn't have any balsamic handy. I also tripled the garlic because I'm a freak like that! I made German Potato salad to repeat the sweet/tart flavor as a side and some fresh steamed green beans to soak up any juices. Yum!
