Re: Marinade for grilled chicken?
This is so simple yet SO good.
Take a large ziplock bag and put your chicken in there. Dice 2 -3 cloves of garlic into small bits, throw them into the bag. 1/4 cup of soy sauce and 1/2 cup of Wishbone Sweet and Spicy French Dressing (they make this in a Light version too if you want to be healthy lol).
Toss it all in the bag and shake it up a bit. Put it in the fridge to marinate for at least 3 hours (I like to put it together in the morning and let it sit til dinnertime).
You can double or triple the recipe for larger crowds. Also, I make a small bowl of the marinade on the side so that I can brush it onto the chicken while it cooks on the grill.

Re: Marinade for grilled chicken?
Easy skewers. Cut chicken into cubes, toss in a Ziploc with a handful of minced garlic, some olive oil , lemon juice and some fresh rosemary. Let it blend for an hour or so. I wouldn't let it go longer than maybe 5 hours max. Meanwhile - soak your bamboo skewers in some lemon water. When the chicken is marinated, thread it onto the skewers. You can put chunks of veggie on with it - or do plain meat. Grill it. Yum.

Re: Marinade for grilled chicken?
My favorite is so easy and delicious. People ALWAYS ask about the marinade when we have BBQs.
Duck sauce low sodium soy sauce Italian dressing
SO good on the grill!

I use the Island Teriyaki stuff from Trader Joe's. Marinating as we speak!

Re: Marinade for grilled chicken?
IMO, the best marinades for chicken are yogurt based ones. It breaks down the chicken and makes it nice and soft and juicy. Marinde chicken (either breasts or chunks for kebabs) in plain yogurt and olive oil, mixed with your choice of herbs ( I do garlic, basil, oregano, salt, black pepper) As it's cooking, brush on some lemon juice and olive oil and make a yogurt dipping sauce with herbs (basil and or mint). It's really good!

Re: Marinade for grilled chicken?
1/2 tsp honey 1 tsp dijon mustard minced glove of garlic 1/2 tsp minced lemon thyme (or other fresh thyme) 1/4 cup balsamic vinegar 1/4 cup (or more, depending on how you like it) extra virgin olive oil. salt and pepper to taste
combine this and pour over chicken. let sit for at least a half an hour.
I also do a similar version of what rojerono wrote...lemon, rosemary, garlic, olive oil.
