What's everyone cooking?

I feel like I've been running out of ideas. We've both been working like dogs so I'm trying to keep it simple. In my rotation:

Pasta with meatballs
Chicken souvlaki
Tacos
Chili
Stir fries
Quinoa bowls
Veggie/salmon/shrimp burgers (I hate beef)

I did perfect my crispy broccoli using frozen broccoli so that's my good news for the week Chat Icon

What has everyone else been cooking? I'd love some new ideas Chat Icon

I’ve been doing complicated things lately (making homemade pasta etc.).

But some simple ones:
Burrito bowls

Open faced sandwich spread. It’s a German thing but you put out butter, nice bread, deli meats, cheeses, pickles, cucumbers, or whatever you have and everyone makes their own sandwich.

Baked salmon. Many different recipes, but salmon is so simple

Lettuce wraps

Soups. Garlic soup is amazing and so healthy.

Salads. Use up all those veggies! I made a great salad with a carrot ginger dressing (like the one you get from Japanese restaurants).

Grilled cheese

BLTs

turkey big mac salad
oven crispy wings
bahn-mi lettuce wraps
pulled pork or chicken sliders or over rice/grains
English muffin pizzas w/ salad
ground turkey or chicken "uglies"
Mediterranean Shakshuka
Cuban Slow Cooker Chicken Fricassee
Pasta with clam sauce and seafood
Pasta with zucchini and diced tomatoes

Last week we had
Turkey rice soup
Pasta with sausage and broccoli rabe (thanks to my neighbors garden)
Sweet and sour chicken
Chicken fried rice
Shepherd's pie

I'll figure out this week after I see what the store has tomorrow.

tacos with spanish rice
ribs with potato salad & corn on the cob
pork chops, homemade potatoes au gratin, brussels sprouts
pasta with meatballs & garlic bread
tonight DH is going to grill hamburgers & london broil, and we will have corn on the cob, salad, & baked potato on the side

The big mac salad is awesome. But we use ground beef . ( i can't stomach ground turkey at all)

tonight was moo shu lettuce wraps for dinner.
tomorrow will be sausage and peppers for lunch and meatballs and pasta salad for dinner.

I made turkey stuffed peppers yesterday and they were so good!!! I used a recipe from the Better Homes and Garden ollddddd red and white cookbook, but adapted it a little.

4 extra-large or 6 medium green peppers
1 pound ground turkey
? cup onion, chopped
½ teaspoon sea salt
Dash freshly ground black pepper
1 (14½-ounce) can diced tomatoes (I used one can of Rotel that is like 10oz)
½ cup water
½ cup long-grain rice
1 teaspoon Worcestershire sauce (I used A1)
1/2 cup Cheddar cheese, finely shredded


Preheat oven to 350°F. Core peppers. Drop into a pot of boiling water, and simmer for five minutes. Drain and place face down on paper towel. Set aside.

Brown ground beef and onion. Season with salt and pepper. Add tomatoes (including liquid), water, rice, and Worcestershire sauce. Simmer for 15 minutes, or until rice is tender. Add half of the Cheddar cheese, and stir until melted.

Stuff peppers with beef and rice mixture. Bake for 15 minutes then remove and add cheese and broil for 5 on high

Makes 4 to 6

Baked Mac & cheese
Fish tacos
Tuna sandwiches
Tex Mex Lasagna
Baked Ziti
Lasagna
White Rice, beans, steak and onions
Pork chops, empanadas, rice with gandules
Buffalo chicken spaghetti squash
Cauliflower soup & corn bread
Sausage & peppers, over rice
Lemon chicken
Roasted chicken with herbs and potatoes
Chicken fajitas
Hot dogs, chips and cole slaw

Yesterday we ate McDonald’s lol

Your pics are amazing! My pics come out lousy, lol. I just ordered a ring light today. Mainly for Zoom teaching, but I want to use it after to take better pics of food.

What was your trick to getting frozen broccoli crispy? I usually buy fresh broccoli and roast the florets in the oven but never thought to do it with frozen.

I made chocolate banana bread last night from the Two Peas in Their Pod recipe. It was seriously to die for! So GOOD. I highly recommend it! My pics didn't come out too awesome though Chat Icon

Omg.. so I made this today and holy crap it was delicious. When I told my DH what I was making, I received the biggest side eye. But he loved it and even my son loved it!!

Thanks for the idea, idk why it took me so long to make it lol.

Basically, but the dressing is like the Big Mac sauce from McDonalds. So it’s like eating a Big Mac without the bread and carbs.
