What are those? They sounds like something DH would like.

We are having salmon pinwheels, rosemary roasted potatoes, and sauted spinach.

Argh. Dinner. Who the hell knows? Anyone have any good ideas for chicken cutlets? I defrosted them, but feel to impatient to cook. I don't want them to get all nasty, though.

Why dont you grill'em and then make some salad.

We are having meatloaf, mashed potaote and corn.

We just bought a crockpot this weekend - so I made us some beef stew! It smelled soooo good when I walked in. We invited the IL's to eat with us. I've never cooked for them!

Chicken w/ Trader Joes Jaipur Bean sauce (an indian type of sauce with 3 beans in it) over Cous Cous.

It was really easy...not something that I had a recipe for, just decided to try it out.

I took one eggplant, sliced it into thin slices, long ways. Put one piece of prosciutto on each slice of eggplant and a little ricotta, plut a piece of spagetti through to hold it together (i use spagetti instead of toothpics because it cooks and you just eat it, no toothpick to pick out), put it in the baking dish.

Did the same thing with chicken breasts, sliced thin.

poured some sauce over them in the baking dish -- topped with mozzerella and baked in the oven at 425 for like 30 minutes.

Served with some mini penne.
