What's for dinner this week??

I plan my meals out for the week. From time to time, something will come up last minute so I'll just push that night off until the next night. Here's this week:

Monday: Naples-style Rigatoni with a Strawberry Summer Salad. Naples-style has italian crumbled sausage, chopped white onions, and plum tomatoes - served with red sauce. The salad is baby spinach leaves and fresh strawberries with a delicious dressing! SO easy to make - this is a 30 minute meal all-together for everything!!

Tuesday: Chicken noodle soup with a ham, swiss cheese, and turkey grilled panini. DH loves soup so even in the summer he wants it at least once a week. Very easy meal and yummy - I use my Cuisinart Griddler for the panini.

Wednesday: Penne with spicy fresh shrimp. This is a 20 minute meal that is so delicious. I just saute the shrimp after they are marinated and have sat for 10 minutes. I like to serve it with a light alfredo sauce but DH eats it with red sauce also. It goes great with an antipasta salad.

Thursday: Prosciutto-wrapped chicken breasts. These are seasoned with oregano, goya adobo (wink papaya), EVOO, garlic minced, and some diluted teriyaki sauce. This is easy to make in the skillet and only takes 25 minutes. I serve it with broccoli rabe.

Friday: Mezzi Rigatoni with calamari rings, cherry or plum tomatoes, and white onions diced. This takes 30 minutes too. I buy the calamari rings fresh at the fish market. They saute great just like shrimp. This dish goes with red sauce best but you can use a vodka too.

Saturday: BBQ for the 4th! Chat Icon I'm making sliders with a shallot-dijon relish, a cucumber ranch dip, and the rest is up to my parents - we are going there for the 4th this year.

Sunday: We'll probably have mexican - burritos or something from Green Cactus. I want to make it a take-out night. Chat Icon

Wow... your meals look fantastic!

I am LAZY this week.

Monday we had hamburgers with green beans and kettle chips

Tuesday we had pizza.

Tonight we are having pork loin, roasted potatoes, sugar snap peas & baby carrots in a herb butter bath and salad

Thursday is whole wheat pasta with baby tomatoes, zucchini, mozzarella and Reggiano parmesan.

Friday is turkey tacos

Saturday is BBQ.. we are invited to my bosses home but my husband invited friends over so it should be a fun shuffling day. I will make marinated steak, beer butt chicken, pasta salad, roasted corn on the cob, cucumber salad and grilled veggies. Dessert is up for debate at the moment but I am leaning toward getting a banana split cake and calling it a day.

mmm turkey tacos sound good!!

to be honest, i get them from curtis stone or that simple living magazine - they have great, EASY recipes.

I am new to the whole cooking thing - only since I've been married - and if I can do it, ANYONE can!

Also, take a look at Barilla.com -- almost all of my pasta recipes are from there and they come out GREAT!

If it is longer than 30 minutes for the meal - I don't make it lol and all of those dinners are just 30 minutes and under! Chat Icon

I cook more in the cooler months- so this week, has been very easy meals.
Monday- Rotissiere chicken , fried rice, salad.
Tuesday- turkey breast with gravy, green beans, and stove top stuffing.
Wednesday- went out for Japenese food.
Thursday- We are having chicken cutlet parm with meatballs and pasta- bought the chicken cutlets and meatballs from Uncle Giuseppes this morning.Chat Icon
Friday- Turkey Kielbasa and french fries.
Saturday- BBQ steak, salad, and baked potatoes.

We eat alot of chicken at least 2-3 times a week

& during the summer I bbq almost every nite ..

Monday
wings on the bbq w uncle dai , OMG so freggin good. I cut the wings in half so they are buffalo style looking .... grilled corn on the cob & beans

Tuesday
mainated london broil
potato cassarole
left over vegs from the nigh b4

wednesday
rotissire (sp) chciken on the bbq
grilled eggplant
mac & cheese

thursday
bbq pinwheel sausage
escarole & beans m m m Chat Icon
nice italian bread...

friday
we usually do take out

saturday
grilled crabs on the bbq
i love this cant wait
grilled corn & asparagus

sunday we are havin a bbq
dogs burgers chciken , salads , etc

Sunday - Taco Salad in a tortilla bowl - Brown ground turkey with taco seasoning packet. Bake tortilla shell (I used one that comes with the mold). Add 2 layers of salsa, romaine lettuce, meat. then top with black beans, corn, shredded Mexican cheese, salsa and dollop of sour cream

Monday - Grilled wings marinated in buffalo sauce, baked beans, corn

Tuesday - leftover wings

Wendesday - Chicken and sausage Farfalle pasta w/garlic bread- Sautee some 2Tbsp garlic in EVOO, then cook spicy italian turkey sausage and 2 cubed chicken breasts. Add a can of crushed tomatos and 1/2 cup of red wine, bring to boil then simmer for 20 min. Add cooked pasta and then 2 Tbsp of fresh basil. Add 1 Tbsp of fresh parmesan - shaved or shredded.

Thursday - Baked Chipotle Beef Taquitos with spanish rice and refried beans

Friday/Sat - DH will grill a variety of stuff

pinwheel sausage , its sausage shaped in the pinwheel circle. Its skinner than link or reg sausage. Usually either chcken or pork versions


OMG CRabs on the BBQ , to die for ..
Just clean them naturally & then put them in a aluminum pan, like one you would use for lasagna. Add some lemon juice , evoo, fresh garlic basil , maybe some oregano. & then you grill them on the Q.. So So good... I love crabs anyways , most ppl dont like eating them , too much of a fuss, but they are soo good this way , also in sauce . Thats really good too,,,

Uncle dai , its the duck sauce, they make saucy susan , but IMO it sucks, uncle dai is chunkier

i found pics , lets see if they work

Thanks for the duck sauce info, I never thought to try that.

Re: the crabs... are they steamed and then you grill them? I assume you aren't putting live crabs on the grill?

yes, steam them for like 2 min , then cook them out on the grill
