Re: What's you favorite cake &/or cupcake recipes? (For DD birthday)
I made this one for DH's b-day with a mocha buttercream with chocolate chips on top. It was simple AND awesome. The cake is so moist and rich tasting. I DIDN'T put the choco chips in the batter. I also used 1 cup of reduced fat sour cream & 1 cup of greek yogurt in place of the 2 cuos of sc.
1 pkg chocolate cake mix 1 3.4 oz pkg instant chocolate pudding mix 2 cups sour cream 3 eggs 1/3 cup oil 1/2 cup water 1 pkg semi sweet chocolate chips
Beat cake mix, pudding mix, sour cream, eggs, oil, and water with an electric mixer until well combined. Batter will be very thick. Gently stir in semi sweet chocolate chips. Spread batter into a well greased bundt pan and bake at 350 for 50 minutes - 1 hour (mine was perfect at 55 minutes).
This one is similar and claims to be the best! The Best Chocolate Cake
Ingredients: 1 box devil’s food cake mix 1 small box Jello instant chocolate pudding mix (not the sugar or fat free kind!) 1 cup sour cream 1 cup vegetable oil 4 eggs, beaten 1/2 cup milk 1 tsp pure vanilla extract 2 cups mini semisweet chocolate chips (you can use regular too)
Instructions: Preheat oven to 350 degrees. In a VERY large bowl (4 qt), mix together everything except chocolate chips. Batter will be thick. Stir in the chocolate chips. Pour batter into cake pan of choice (I normally use two 9-inch pie pans). You could use this batter to make any kind of cake: sheet cake, cupcakes, bundt cake, etc. For cooking time, use the cooking times on the back of the devil’s food cake box as a guide and add around 10 minutes to whatever it says. Do the toothpick check, and if it’s not done, I check on it every 5 mins after that. It usually takes around 45 mins for two, 9-inch pie pans

For cake mix:
1 white cake mix 2 eggs 1 C yogurt (any smooth textured fruit flavor is fine!) or sour cream 1/2 C milk 1/3 C vegetable oil
Combine all ingredients - bake according to package
From Scratch (I got this one from someone on LIF and it's divine):
vanilla cupcakes

Re: What's you favorite cake &/or cupcake recipes? (For DD birthday)
this is a super easy cupcake recipe but people seem to love it...
pre-packed white cake mix (not vanilla) - i prefer pillsbury brand a package of oreos
take about 10-15 oreos and crush them in a blender
put the cupcake wrappers in the cupcake tray and then place half an oreo in each wrapper (some will have the filling some wont, no big deal).
make the pillsbury mix as on the box but once its done add in 3/4 of the crushed oreos and stir
pour into the cupcake trays and bake as directed
once cooled, frost (i use white frosting) and then take the remaining 1/4 oreos and sprinkle on top of each cupcake
enjoy!!!
