What's your Turkey method of preparation?

I typically butter, herb, stuff cavity with lemons & herbs. Put water & white wine in the pan, tent foil & baste.....BUT I baste so much that it takes up too much time.

I'd love a method that make a juicy & flavorful turkey, but I can forget about while it cooks.

Please Rec your technique!!!!

I rub a mixtture of butter, herbs, salt and pepper under the skin and roast it. I don't baste it, because I feel like the skin doesn't get crispy enough and I LOVe eating the skin while I'm carving iit.

This will be the first year I am doing this but I hear its how you get the juiciest turkey! prepare as you normally would... but put it in the rack BREAST SIDE DOWN.... the fat is then on top and the turkey self bastes... You turn in around (breast side up) for the last 30 minutes of cooking time.

I have made tons of turkeys and the juiciest most flavorful one EVER was last year when my husband made it. He used Alton Brown's brining recipe the night before we cooked ir......OMG heaven!!!! I'll never NOT brine a roasted turkey again!

Good Eats Roast Turkey

Ingredients

    * 1 (14 to 16 pound) frozen young turkey

For the brine:

    * 1 cup kosher salt
    * 1/2 cup light brown sugar
    * 1 gallon vegetable stock
    * 1 tablespoon black peppercorns
    * 1 1/2 teaspoons allspice berries
    * 1 1/2 teaspoons chopped candied ginger
    * 1 gallon heavily iced water

For the aromatics:

    * 1 red apple, sliced
    * 1/2 onion, sliced
    * 1 cinnamon stick
    * 1 cup water
    * 4 sprigs rosemary
    * 6 leaves sage
    * Canola oil

Directions

2 to 3 days before roasting:

Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.

Combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries, and candied ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate.

The night before you'd like to eat:

Combine the brine, water and ice in the 5-gallon bucket. Place the thawed turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed, cover, and refrigerate or set in cool area for 8 to 16 hours, turning the bird once half way through brining.

Preheat the oven to 500 degrees F. Remove the bird from brine and rinse inside and out with cold water. Discard the brine.

Place the bird on roasting rack inside a half sheet pan and pat dry with paper towels.

Combine the apple, onion, cinnamon stick, and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey's cavity along with the rosemary and sage. Tuck the wings underneath the bird and coat the skin liberally with canola oil.

Roast the turkey on lowest level of the oven at 500 degrees F for 30 minutes. Insert a probe thermometer into thickest part of the breast and reduce the oven temperature to 350 degrees F. Set the thermometer alarm (if available) to 161 degrees F. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let the turkey rest, loosely covered with foil or a large mixing bowl for 15 minutes before carving.

I also use Alton Brown's brine. Last year I got so many compliments on how moist the turkey was. Only bummer is that I don't have a probe thermometer. Maybe I should invest in one...

I finally bought one 3 years ago (a digital one that can stay in the oven) and I honestly don't know what I did without it. It was $20 @ BBB before coupon.

Candied ginger you find in Asian section...but I was wondering about the berries though.

ITA!! Alton's Brine recipe is the BEST!! I don't even like turkey and this comes out amazing every year. We will never use a different turkey preparation ever! It is so moist and juicy and it actually cooks quite quickly without a lot of babysitting.

All spice berries are in the spice section - the jar says Whole All Spice on it. Most major spice companies make it. I got the candied ginger at TJ's or once at Meat Farms - it's in the section where the weird nuts and candies are. You could do 1.5 times the recipe - or honestly, if you have enough liquid to cover the bird you should be fine.

I omit the ginger and the berries. Also, I always have a 20-22lb turkey. If I need more liquid to cover, then I add more stock and some more salt.

Thank you to whoever suggested the digital thermometer. I've always been too cheap, but I'll invest in one now. Chat Icon

I found "Crystalized Ginger" in the Asian section at KK. Is that the same?
