Where to buy good sweet sausage for sauce
I am not a sausage person at all but my family loves them. Where can I get good ones to add to my sauce? Also should I cook in a pan and then add to sauce? cook all the way through or let it finish in the sauce? I typically make marinara with no meat inside. TIA!!

I brown them real quick in a pan with a tsp of EVOO. Just get a little color on them, not cooking them all the way through. I then toss them in the sauce, and let them simmer a few hours. Comes out delicious and so tender.

I buy my sausage at Del Fiore in Patchogue...the best in my opinion.

This sounds good. How do you know when they are cooked all the way through?

I buy all my meats from Iavarone's. I just throw them in the sauce raw and let it all cook together for a couple hours.

I get all my meat from North Shore Farms. I cook my sausage in the sauce, it's nice & tender that way. My husband browns it first, then cooks in it the sauce for about half of the time the sauce would cook.
I like both ways, my way is just less work haha

We use to always get our sausage from Primavera on Hicksville Rd when I lived in Massapequa. Delish!!!
I brown my sausage first to get some color on them and give them a head start in cooking and then I finish them in the sauce.
ETA - No matter why you go, the BEST sausage is from a good Italian deli which are everywhere on Long Island. I won't eat sausage from anywhere else, it doesn't even compare.

If you cook the sauce on a low simmer for a few hours (I usually cook 3 hours), the meat will be cooked through. I also add my meatballs into the sauce too, no browning first. Comes out amazing

Re: Where to buy good sweet sausage for sauce
La Favorita in East Rockaway has the best sausage. I find Ivaronne very peppery.

Re: Where to buy good sweet sausage for sauce
I am in Massapequa too!
A&S Pork store on broadway Primavera
I actually bought it in BJ's out of convenience last time and it was very good.
I am very picky about my Italian food too!
Oh and yes, brown in pan then add to sauce!
