Wustof-Trident Classic 10-pc set + the santuko knife + a cleaver
Look for FULL-TANG, FORGED from a single piece of HIGH CARBON STEEL
Henkles also makes a good product.
Pots & Pans and Knives are $$$$$, but a good investment will last you for years. My parents still have their knife set from when they were married in 1971!

I also have the Wusthof Classic, 10-pc set. We have since added the Santoku (which is by far, my most favorite knife).
ETA: you should really go to a store (we went to Fortunoff's) and handle the different brands. They each feel different in your hand. For me, the Henckels was too light - I prefer the weight of the classic Wusthof. The Global - though, gorgeous - were too slippery in my hands. Etc, etc.

oooh, I have a great story.... a triumphant shopping moment at homegoods about 3 years ago....
I'm a foodie.... LIW girls can vouch for my cooking obsessions When I was still in school, I gave myself the ultimate gift.... a really high end pot set. They are made by iittala, a scandinavian company, and are clad steel pots like allclad.... but much more modern so, I swore I would stick to a budget after that hideous $$$ splurge...
Then I was in homegoods shopping and saw the iittala embelem from the corner of my eye. there was an ENTIRE KNIFE SET BY IITTALA. I literally scooped them all up and dropped them in my cart. The man next to me thought I was nuts.
$900 knife set for under $200

I agree.... it's very important, especially since everyone has a slightly different grip and hand size.
Oh, a bit of knife info.... The best cleavers, chefs knives, and veggie knives are forged carbon steel, since you hack around with them... the cleavers should be able to cut through bone w/o a problem. (forged steel is very rigid)
Knives requiring flexibility, such as boning knives and bread knives should be made of stamped steel.
Oh, and the ultimate knives for thin slicing, detail work, and paring aren't made of metal at all.... they are ceramic.... but don't drop those $$$ japanese toys!!!

I have Chef's Professional...I got them from a chef supply place years ago.
I agree with the other posters...spend money on your knives. The payback is well worth it. I have been using the same knives for over ten years and when I do get them sharpened (every couple of years) the sharpener always comments on what good knives they are and how people don't buy quality knives anymore.
