Re: who has fairly simple cookie recipes?
If you go to Epicurious.com and do a search for basic butter cookies, a list of 19 recipes will come up.
All of the ones from 1995 should use the same base butter cookie recipe and all of the ones from 2003 should use the same base recipe.
When you click on the recipes, there will be a link to the base recipe.
I use the 2003 one for all of my cutouts - so good.
The caramel pecan cookies are AWESOME (especially if you like pecan pie!).

Pumpkin chocolate chip. Best cookies EVER. One box of spice cake mix, one can of pumpkin (the smaller soup can size). Mix together with mixer, add half bag of chocolate chips, drop by teaspoonfull on ungreased cookie sheet and bake at 350 for 12 minutes or so.

Do you think you could freeze the dough and bake a later time?
I like to make all of my doughs in advance then take them out, defrost, and bake the week of Christmas.

Re: who has fairly simple cookie recipes?
I make chocolate chip fudge bars
You get one of the biggest rolls of cookie dough.
Grease and line a 13x9 pan with a layer of cookie dough.
Pre-heat oven to 325.
In a bowl, melt a bag of chocolate chips...add a pinch of salt and a can of sweetened condensed milk. Melt this in the microwave for like 20 seconds and stir together.
Pour this over the layer of chocolate chips.
Use whatever is left of the dough to add flecks of choc chip cookie dough on top.
Bake for 18-19 minutes.
COMPLETELY COOL.
I stick it in the fridge before slicing it.
You will never look back.

I wouldn't 'cause pumpkin is a terrible freezer- it sweats really badly.

Re: who has fairly simple cookie recipes?
I got all these recipes off of here years ago...
I would imagine any cake mix would work with the first 2 recipes...
Devil’s Food Cookies Yields about 3 dozen cookies.
1 (18.5-ounce) package duncan hines (or any brand) moist delux devil’s food cake mix 1/2 cup vegetable oil 2 eggs 1/2 cup chocolate chips (Optional) 1/2 cup chopped walnuts (optional)
Preheat oven to 350. Grease baking sheets. Combine cake mix, oil, and eggs in a large mixing bowl and mix well. Stir in optional candy/nuts. Shape dough into 36 (1 1/4 inch) balls. Place 2 inches apart onto cookie sheets. Bake for 10-11 minutes. Cool 2 min. on cookie sheets, then remove to cooling racks.
You can substitue M&Ms, reeses pieces, white chocolate chips, etc for the chocolate chips or any kind of nuts for the walnuts. I like using M&Ms in the christmas colors (Red & Green) for christmas time. they also sell red & green mint M&Ms... those are awesome!
Easy Lemon Cookies 1 pkg. Duncan hines Moist delux lemon cake mix 2 eggs 1/2 vegetable oil 1 tsp. grated lemon peel Pecan halves for garnish
1. Preheat oven to 350 deg. F 2. Combine cake mix, eggs, oil, and lemon peel in lg. bowl. Stir until thoroughly blended. Drop by rounded teaspoons full 2 inches apart onto ungreased baking sheets. Press pecan half into center of each cookie. Bake at 350 deg. F for 9-11 mins or until edges are light golden brown. Cool 1 min on baking sheets. Remove to wire racks, cool completely.
Tip: you can substitute whole almonds or walnit halves for the pecan halves.
5 MINUTE FUDGE WREATH - RACHAEL RAY
1 (12-ounce) bag semisweet chocolate morsels 9 ounces (3/4 of a 12-ounce bag) butterscotch morsels 1 (14-ounce) can sweetened condensed milk 1 teaspoon vanilla extract 1 (8-ounce) can walnut halves 1/2 cup (a couple of handfuls) currants 8-inch cake pan, lightly greased with softened butter Candied cherries, red and green, for garnish, optional
Place a heavy pot on the stove and preheat it over low heat. Add chips and milk and stir until chips are melted and milk combined. Save the empty condensed milk can. Stir in vanilla and remove fudge from heat. Add nuts and currants and stir in immediately. Cover empty condensed milk can with plastic food wrap and center it in the greased cake pan. Spoon fudge into pan around can, making sure to recenter can if it drifts.
The fudge will set up almost immediately. Garnish can only be added in the first minute or 2 the fudge is in the pan, so work quickly. Decorate your wreath with "holly" made from cut candied red and green cherries. A wreath left plain can be garnished with a pretty fabric bow when serving. Chill covered in the refrigerator and slice fudge very thin when ready to serve, a little goes a long way.
BUTTERSCOTCH BUTTERS 1 c. Reeses butterscotch pieces 2 tbsp. Reeses peanut butter 2 c. puffed rice 1/2 c. chocolate for dipping
Combine the peanut butter and the butterscotch pieces in a double boiler, stirring constantly over hot water until melted. Stir in the puffed rice. Drop by tablespoonfuls onto waxed paper and allow to cool. When thoroughly cooled, dip each ball in tempered chocolate or chocolate which has been prepared for dipping.
Variation: These also work well on their own without being dipped in chocolate, so you may choose to skip the final step
