whole wheat flour vs regular flour question
if a recipe calls for 2 cups of flour, but i want to substitute with whole wheat flour, would you use the same measurements or a little less?

I usually only use half whole wheat and half regular. If you use all whole wheat, it can come out very dense - i.e. if you are making banana bread, etc. If you are making wheat bread then I would follow a specific recipe for it. I use the same total amount of flour that it calls for.

thanks! thats exactly what happened to me. i made banana bread and used all whole wheat and it tasted a little dry.

whole wheat is "thirstier" than all purpose flour. it's also more dense. you'll need more water and/or less flour if you're going 100% ww.
if you're making something like a quick bread, i'd substitute little by little until you find the balance that's good for you.
i make ww bread almost every week, and it is very different than working with ap flour.

I was just going to post the EXACT same thing! I never substitute the entire recipe, just half (or slightly more, depending on what I am making)
