would this be good?

This is what I have in the house, so I was thinking of this recipe.

Cut tops off and scoop insides out of fresh tomatoes, fill it with cooked quinoa and feta cheese and bake it.

Should I add the tomato insides to the quinoa and feta mix?

What should I serve it with (I think DH will want another protein).

OMG! That so sounds so yummy!!! I wouldnt add the rest of the tomatoes in there.

Can you serve it with grilled chicken and grilled asparagus?

Sounds delicious to me! I would think maybe a lemon chicken type dish and a green veggie would be good.

I think that would be good... it's similar to the cheesy orzo tomoto recipe I posted the other day (which is orzo and boursin filled tomoatoes).

I wouldn't add the tomato pulp... I think it will water down your filling too much. If you have fresh herbs (dill, parsley) that would probably be good to add.

I would make sure you season the insides of the tomatoes before you fill them.

And my recipe called for a parmesan topping, so parmesan or some kind of breadcrumb or panko would probably be good to add some crunch.

hmm maybe ill mix a little feta and breadcrumb.... that's a good tip about seasoning the insides

and im going to put spinach..
