I have been liking Alton Brown's baked recipe which you can find by clicking here!
I make 2 changes.. 1 use Gruyere cheese with just a handful of cheddar. I also brown up pancetta and remove it from the pan. I use the pan with the remaining oil and brown bits from the pancetta to melt the butter and get the cheese sauce going. I toss 3/4 of the pancetta with the mac and cheese itself and the remaining pancetta with the breadcrumb topping mixture.

This is my absolute favorite, people LOVE it...
Chuck's Mac and cheese
I omit the topping and I put the cottage cheese in a food processer to smooth it out.

I actually just made Ina Garten's last night. It's made with Cheddar and Gouda with tomatoe and breadcrumbs (I used panko) on top.. it was awesome!!!

We also use Allton's & I think keep it as is. It's delicious, but I like the idea of using Gruyere.
