anyone have a weight watchers recipe for scallops they would like to share?

POINTS® Value: 7 Servings: 4 Preparation Time: 25 min Cooking Time: 14 min Level of Difficulty: Easy The secret to perfectly browned scallops is to pat them dry before sautéing. For variety, try this recipe with shrimp instead of scallops, or a combination of the two.
Ingredients 3 tsp canola oil, divided 1 1/2 pound scallops, about 20 sea scallops (pat dry with a paper towel) 1 medium onion(s), cut in half and then thinly sliced 1/2 pound shiitake mushroom(s), stems discarded, caps sliced 1 Tbsp ginger root, freshly grated 2 tsp minced garlic 1 1/4 cup shredded carrots, divided 1 cup mung bean sprouts 2 Tbsp low-sodium soy sauce 2 Tbsp fresh lemon juice 1 medium scallion(s), sliced Instructions Heat 2 teaspoons of oil in a large nonstick skillet over high heat. Add scallops in a single layer and cook until bottoms are browned, about 2 minutes. Flip and cook until browned on both sides and scallops are just cooked through, about 2 to 3 minutes more; remove to a plate.
Heat remaining teaspoon of oil in same skillet. Add onion and stir-fry until lightly browned, about 2 minutes. Add mushrooms and stir-fry until mushrooms and onion are almost tender, about 2 minutes.
Stir in ginger and garlic; stir-fry until fragrant, about 30 seconds. Stir in 1 cup of carrots, bean sprouts and any juices that have accumulated on scallop plate; stir-fry until carrots and sprouts have softened slightly, about 1 minute. Remove from heat and stir in soy sauce and lemon juice.
To serve, spoon 1/2 cup of vegetable mixture onto each of 4 plates. Top each with 5 scallops. Garnish with remaining carrots and scallion.

Ingredients 1/4 cup low-sodium soy sauce 1 Tbsp fresh lime juice 1 Tbsp dark sesame oil 1 tsp sugar 1/4 tsp hot pepper sauce 1 1/2 pound scallops, (about 30) 2 tsp cornstarch 2 tsp olive oil, divided 2 Tbsp cilantro, coarsely chopped 2 tsp no-salt toasted sesame seeds 1 medium lime(s), cut into wedges (optional) Instructions Combine soy sauce and next 4 ingredients in a heavy-duty zip-top plastic bag; add scallops. Seal and marinate in refrigerator 30 minutes, turning occasionally.
Remove scallops from bag, reserving marinade. Slowly stir cornstarch into marinade with a whisk. Add enough water to marinade mixture to measure 2/3 cup.
Heat 1 teaspoon olive oil in a large nonstick skillet over medium-high heat. Add half of scallops and cook 3 to 4 minutes on each side or until golden. Remove scallops from pan; set aside and keep warm. Repeat procedure with remaining oil and scallops.
Transfer scallops to serving plates. Wipe pan with a paper towel. Reduce heat to medium-low. Stir marinade mixture and pour into pan; bring to a boil, stirring constantly. Reduce heat, and simmer 1 minute or until slightly thick, stirring occasionally. Pour mixture over scallops; top with cilantro and sesame seeds. Garnish with lime wedges, if desired. Yield: 4 servings (serving size: 6 to 8 scallops).

chilli crusted sea scallops
POINTS® Value: 2 Servings: 4 Preparation Time: 12 min Cooking Time: 13 min Level of Difficulty: Easy Our Mexican-inspired marinade caramelizes as it cooks, forming an intensely flavored, sweet and tangy scallop crust.
Ingredients 3 Tbsp fresh lemon juice 1 Tbsp unpacked light brown sugar 2 tsp chili powder 1/2 tsp lemon zest 1/2 tsp ground cumin 1/2 tsp table salt 1/4 tsp cayenne pepper 1 pound scallops, about 16 sea scallops 2 medium zucchini, cut into 1/2-inch-thick slices Instructions Preheat broiler. Coat a large baking sheet with cooking spray.
Whisk together lemon juice, sugar, chili powder, lemon zest, cumin, salt and cayenne in a small saucepan; set pan over medium-low heat and simmer until mixture thickens, about 2 to 3 minutes. Transfer mixture to a shallow dish, add scallops and turn to coat.
Transfer scallops to prepared baking sheet and arrange zucchini slices alongside. Broil scallops and zucchini until scallops are cooked through and opaque and zucchini is tender, about 3 to 5 minutes per side. Yields about 4 scallops per serving.

I cooked them the other night actually. I sauted them in about 1 tbsp of white cooking wine, added minced garlic a little parsley, some lemon juice and chopped tomatoes. Quite tasty.
