Hi :)

Just wondering if you dredge your chicken cutlets in flour in addition to dipping them in breadcrumbs.

I know this is a weird question!

I've done it with and without flour and I haven't seen a huge difference in how they come out.

I do this. I dip them in egg then flour then egg again and then bread crumbs

No but I do bread them all first and let them sit for a bit before I fry them up. It makes the coating stick better. (Im talking 10 minutes or so.)

i've done both but i flour then egg then bread or no flour and i didn't notice a difference

nope...I dredge mine in a mixture of one egg and 1 tbsp. of water, then in breadcrumbs.

no, just breadcrumbs, especially if I am frying them.

If I bake them, I like to use flour too. Just the differences in cooking to use two different ways.

This is what I do:

Parmesian Cheese

Egg

Bread crumbs mixed with Garlic Powder.

Fry on each side and then bake for 25 min

I went to Nader's cooking class (owner/chef of Bravo Nader) with a couple of friends and he said to use flour, then egg, then breadcrumbs. The flour "lock in the moisture of the chicken and stops it from drying out".

depends! When I want a super crust (ex, chicken parmesan), I dredge in flour, then egg, then crumbs.. If I want a light coating and just a hint of golden color, I only dredge in crumbs and then fry (lemon chicken).

Exactly. I learned the same thing in cooking classes I did when I studied restaurant management.

Yes, flour to seal in the moisture of the chicken, then egg, then breadcrumbs.

It also helps the crispy factor. It's my MIL's recipe.
