We took DD to disney last year. and she is only 2, so the age difference is great. But I can tell you what worked for us.
staying on disney property is the best thing we did. we got our meal plan free (only had to pay for DD, her meals were about $6 each) and we took the buses to all the parks.
we rented a car, but again, we used it for DD. we went to target when we got down there and got everything we needed for her. we drove to universal and the same night drove to downtown disney for dinner. it was a rainy day and universal was a washout.
we stayed for 8 days, monday to monday. I don't think you need all that time, especailly with older boys. but we wanted to do a park each day and not have to race to 3 parks in one day with a 2 y/o. KWIM?
