Xpost from PG - Recipe suggestions for very easy dinners
I am pregnant and I have been sick this week. I need to plan dinner and food shopping for the week. I want to make my life very simple and easy this week b/c I don't want to get sicker and I am due in a few weeks.
Any very simple and easy dinner recipes or recommendations that I can prepare this week? I can't do take-out too often b/c I will be even sicker.

Hey! If you have a crock pot this recipe is great!
4 boneless, skinless chicken breasts 1 cup salsa 1 package reduced sodium taco seasoning 1 can reduced fat cream of mushroom soup (condensed) 1/2 cup reduced fat sour cream
Directions
Add chicken to slow cooker. Sprinkle taco seasoning over chicken. Pour salsa and soup over chicken. Cook on low for 6 to 8 hours. Remove from heat and stir in sour cream. Serve with rice.
Quick easy and makes dinner for the week in one shot!

PREP TIME 5 Min COOK TIME 40 Min READY IN 45 Min Original recipe yield 4 to 6
SERVINGS (Help) Servings US METRIC
INGREDIENTS (Nutrition) 1 (16 ounce) package frozen French fries 1 (16 ounce) package frozen chopped broccoli 1 1/2 cups cooked, cubed ham 1 (10.75 ounce) can condensed cream of mushroom soup 1 (10.75 ounce) can milk 1/4 cup mayonnaise 1 cup grated Parmesan cheese DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13 inch baking dish with cooking spray. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. In a small bowl mix together soup, milk and mayonnaise. Pour mixture evenly over ingredients in baking dish and sprinkle with cheese. Bake uncovered in preheated oven for 40 minutes.
---------------------------------------------------- Instead or french fries I use the frozen hash browns. I have also adde teh french fried onions to this and it was very good. You can also sub any other kind of cheese with it. Imay not sound so good, but it is delicious!!!!

Aluminum foil chicken packets (no clean up and yummy)
1. tear sheets of foil for each serving;
2. place 1 boneless chicken breast or thigh in middle of foil sheet;
3. place approxiamately 1/4 cup of salsa on top of chicken;
4. add some frozen corn on top or any other veggie you like - fold into packet sealing edges
5. bake for about 30 to 40 minutes
6. open packet sprinkle w/ a little grated cheddar and enjoy
serve w/ rice or a baked potato

or how about a quick chicken pot pie -
1 bag frozen mixed veggies about 1 to 1 1/2 cups cooked chicken 1 can condensed cream of chicken soup-any kind (store brand, fat free, low sodium) 1 egg about 2 cups of milk bisquick
mix cooked chicken, frozen veggies, can of soup and soup can filled w/ milk - pour into pyrex or caserole dish of your choice
mix 1 cup milk, 1 egg and about 1 cup of bisquik together - pour over the top of chicken mixture
bake until crust is a light to golden brown and serve -

Yummy recipe, Moon!
I love my slow-cooker for easy dinners. If you don't have one, a large soup pot on a stovetop will work, just make sure the flame is low. This is about 1/2 hour of prep (it's a lot of chopping) but after that, dinner cooks itself. I serve this with salad and corn bread.
Slow-Cooker Beef Stew
4-5 red skin potatoes, cut into cubes 4-5 carrots, cut into chunks 1/2 onion, cut into chunks 2 fresh garlic cloves, crushed (or 1/2 teaspoon dried diced garlic) 1.5 lbs chuck steak, cut into cubes 2 cans condensed beef broth (about 2.5 cups) 1/2 cup flour 2-3 tablespoons woschire (sp?!?) sauce 2 tablespoons low-sodium soy sauce 1/2 bag frozen peas 2 bay leaves 1 tablespoon paprika 1 teaspoon black pepper
Put carrots, potatoes, onion, pepper, paprika in a mixing bowl. Stir to coat vegetables. Add to slow cooker.
Put steak cubes, worschire sauce, soy sauce, and flour into mixing bowl. Stir to coat. Add to slow cooker.
Add bay leaves and beef broth to slow cooker. (The broth does not need to cover the other ingredients; it should come about 3/4 of the way up).
Cook on "low" setting for about 4 hours and "high" for another 60-90 minutes. Add peas 10 minutes before you're ready to serve. Remove bay leaves when you add the peas.
Add a tablespoon of flour mixed with broth to thicken stew; add beef broth to thin it.
ETA: The stew freezes well, so you can make a lot and toss it in tupperware!
