XPOST Recipes - Chocolate for Choco covered pretzels
sorry for the XP but I need to do this for Saturday
What kind of chocolate do you all use?
I find that I get a whitish haze on the chocolate after it hardens. It doesn't affect the taste or anything just the presentation. I thought I read somewhere that some chocolate will do this.
last time I used metled choco chips, I've also melted down Ghirardelli Bars.
The Wilton (?) melting disks and almond bark do not taste good to me.
any suggestions?
Thanks!

I've melted the Ghirardelli semi sweet chips with heavy cream. I've had no problems.
Ok...now I'm dying for some!

There is a place in Commack that sells chocolate. It's right next to the Spare Rib - I can't think of the name of the place but this is where my sister buys her chocolate from when she makes chocolate covered stuff.
I think its next to a pool place too.

I always use the melting chips they sell in Michael's and AC Moore and I never have any problems. I'm always making chocolate for my son's nursery school class!

I always use merckens
If it's turning white, it could be because you're subjecting it to changing temperatures or moisture.
Do you put them in the firdge or freezer to harden? If you leave it in too long or there's too much moisutr, this may happen. Also some chocolates are not really ideal for remelting

thank you ladies... I think my problem is not tempering the 'real' chocolate.
