Your best dish

What do you think is your best dish or recipe..signature dish or specialty.

Also tell us where you got it from or if you made it up all by yourself.

Re: Your best dish

I tweaked this from a recipe I got online. it's so easy and delicious. I usually serve with rice or buttered noodles.

Spinach & Feta Stuffed Chicken:

INGREDIENTS
4 skinless, boneless chicken breasts
1/4 cup mayonnaise
1/2 cup crumbled feta cheese
2 cloves garlic, chopped or garlic powder
1 (10 ounce) package frozen chopped spinach, cooked & drained

DIRECTIONS
In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.

Lay out thin chicken cutlets and spoon spinach mixture into chicken breasts and roll them up. You can secure with a toothpick, but I didn't find it necessary.

Heat a small amount of EVOO in a pan and sear chicken, flip a few times so each side is nicely browned. You can either cook all the way through or finish off in the oven at 375/400 degrees about 20 minutes.
