Yummy Chicken Ball Soup...quicker then regular chicken soup IMO.
I make this soup every few weeks since it is awesome and my DH loves it. I make a big pot and we bring it in bowls for lunch and have had it for dinner too. I would actually say that it's more of a stewp then a soup since the rice expands and it's VERY thick.
I make chicken balls -- long story as to why --- and use the chicken broth from a box so that I don't have to go through the whole process of making homeade stock and shredding the chicken once it falls off of the bone.
In a large pot (like the one you use for spagetti sauce) put one circle of EVOO ---cut up one whole onion, 5-6 stalks of celery and one bag of baby carrots and put in the hot oil to start sauteeing. Add in a sprinkle of salt & pepper and 3 bay leaves.
WHile the veggies saute, take 1.5 lb pack of ground chicken and mix in a bowl with 1 egg and 1/4 cup of bread crumbs. Form chicken mixture into small meatballs, 1 inch in diameter.
Push the veggies aside in the pot to make a "well" at the bottom. Place the chicken meatballs in the bottom of the pan, so that they begin to brown.
While they are browning cut up whatever other veggies you want to add in. I usually cut up 1-2 zuccini and a box of mushrooms.
Add in the extra veggies and pour in 2 boxes of low-sodium chicken broth.
After about 20 minutes of letting everything simmer, add in about 1 cup of rice. turn down the heat and let it cook for about 1.5 hours.
Take out the bay leaves before serving. I usually make this the night before so that it can sit in the fridge and the flavors can meld before we eat it. It is total comfort food and isj ust a quicker way to make homemade chicken soup.

one question-I never have any luck with rice or pasta in soup...gets so mushy, so I make it on the side, then just throw it into the soup bowl..is there a trick?

The trick is to put it in at the very end, don't be tempted to put the pasta or rice in too early...
If only I had time to cook...or a floor in my kitchen

I went to uncle guisseppes and they didnty have any chopped chicken, so I made it with chopped sirloin and beef broth. It is cooking right now and it smells yummy Scott

Scott & Danielle -- I know you live in Levittown. I get ground chicken at Pathmark -- made by Purdue --- or the butcher on N. Wantagh Avenue right by the Carvel shopping center (past the fire department) should be able to get it for you...
You hold the chicken together by mixing the meatballs with some breadcrumbs and one egg. The egg will make them hold together.
And yes, I'd imagine that you can substitue it with turkey meat. I buy ground turkey all the time and that would be good also.
As far as the rice, I like mine to get all soft and mushy --- that's why I say it's a stewp, because it's almost like a stew because it gets thick. But that's how my DH and I like it, so I don't mind.

I usually get my chopped chicken at Stop and shop but I was heading to uncle guisseppes so I decided to go there.
We dont usually goto Pathmark
I have so much soup left over - Im going to have some for lunch...and ask my neighbors if they want some. I gave some of my chicken soup away last week...and the neighbors loved it Scott
