Yummy recipes...LOVE this blog!

Tried some things recently..This website is awesome!

O Cookie s( mine were kinda sticky but YUMMY!)

“O” Cookies! (Makes 30 Cookies)

1/2 Cup Nut Butter (almond, peanut or sunflower)
1/2 Cup Rice Syrup
4 Cups O’s Cereal (you can use whatever “O”-type cereal you like: Cheerios, Trader Joe’s O’s, etc.)

1. Place the nut butter and rice syrup in a small saucepan over low to medium heat and warm for 2 minutes or until it becomes smooth and combined.
2. Place the cereal in a bowl.
3. Pour the warm nut butter/rice syrup mixture into the bowl with the cereal and stir to combine.
4. Shape into cookies (I used a mini ice cream scooper to scoop out each portion, but you could also use a tablespoon). You can also place the mixture into a 9 x 9 inch ungreased pan, pat down and then cut into bars. As the O’s mixture cools, it will harden.
5. Serve.


Noodle Pancakes

Noodles Pancakes (Serves 4 – about 8-10 Pancakes)

2 Cups Cooked Egg Noodles
3 Eggs, whisked
1/2 Cup Ham, diced (about 3 slices)
1/2 Cup Swiss Cheese, shredded
1/3 Cup Corn (I used frozen corn that I defrosted first)
1/3 Cup Red Bell Pepper, diced
1/2 Tsp Salt
Olive Oil

1. Place all the ingredients (except for the olive oil) in a bowl and stir to combine.
2. Heat 1 tbsp of olive oil in a large saute pan over medium heat.
3. Pour about 1/4 cup of the noodle mixture per pancake in the pan and cook for 3 minutes (you can pour as many pancakes at once as fit comfortably in your pan).
4. Flip the pancakes and cook an additional 3 minutes. Continue making the pancakes with the remaining mixture.
5. Serve with ketchup or alone.


And a good puree for the babies ( I have not tried this one yet but plan to soon, once we've been on yogurt a bit)

Quinoa Banana Mash

Quinoa Banana Mash (Makes 2 Servings)

1/2 Banana
Pinch Cinnamon
3 Tbsp Cooked Quinoa
1 Tbsp Whole Milk Yogurt

1. Place all the banana in a bowl and mash.
2. Add the remaining ingredients and stir to combine.
3. Serve.

Banana Bites (Makes 2-3 Servings)

2 Bananas
1 Cup Pancake Batter (Your favorite boxed brand OR your weelicious favorite recipe: Whole Wheat Oat Pancakes, Raspberr-Wee Pancakes (minus the raspberries) or even Vegan Pumpkin Pancakes)

Accompaniments: Honey, maple syrup, yogurt or a healthy berry sauce

1. Cut the bananas into 1/4 inch slices (I like to make slices on a diagonal bias so they’re a little bit longer than circles).
2. One at a time, dip the banana slices into the batter, coating all over, shaking off the excess batter into the bowl and place on a buttered griddle or skillet over medium heat.
3. Cook for 1 minute on each side or until golden.
4. Serve.


Banana Flats

Banana Flats (Makes Approx. 12 Strips)

2 Bananas

1. Preheat oven to 250 degrees.
2. Slice the bananas lengthwise into 1/8 inch strips.
3. Place the banana strips on a Silpat or parchment lined baking sheet and cook for 1 hour and 15 minutes.
4. Cool and serve.
