This is the recipe I got from my Mom, and have been eating it all my life. So good, and moist. Tastes great with cream cheese on it.
Zucchini Nut Bread
3 cups shredded zucchini (don’t use the large ones, they have too many seeds)
3 cups flour
1/2 tsp. Baking powder
1 tsp. Cinnamon
3 eggs
2 cups sugar
1 cup oil (vegetable or canola)
1 tsp vanilla
1 cup chopped walnuts
Preheat oven to 325
In a small bowl, mix the flour, baking soda, baking powder, and cinnamon with a fork.
In a large bowl, beat the eggs, add sugar and blend. Then add the oil and vanilla.
Alternately stir in flour mixture and zucchini into eggs and sugar mixture. Once it is all mixed add the walnuts.
Pour mixture into greased and floured pan.
Bake for ~90 minutes. Will make 1 large loaf or 2-3 small loafs (which will take less cooking time). The top of the bread will rise, so watch that it doesn’t burn.
