Same thing we always have - Pernil (roasted pork), arroz with gandules, and my sister is going to make baked chicken instead of a ham this year.
we usually have our pernil with white rice and black beans. i'm not in the mood to make black beans, so i'll be making arroz con gandules.

What's everyone having xmas eve?
since there's no big Italian gathering this year, it's just us. my mom and my brother (9 ppl) we're having the same thing except on a much smaller scale.
Seafood salad
Baked clams
fried calamari
Octopus
Cheese & olives
Then pasta with mussels, crab, clams and lobster
Baked & Fried baccala`
Baked shrimp oreganata
Broccoli rabe
Potato croquettes
Salad
Roasted Chestnuts and nuts
Fruit/anise
Cookies, torrone & dessert

What's everyone having xmas eve?
Since we are a small group, we changed it up this year. We’re having lasagna, meatballs and chicken parm for Christmas Eve. Then Christmas Day we will have a small prime rib and cheesy chicken roll ups that the kids like with twice baked potatoes and veggies. And homemade cheesecake, cherry pie and brownies for dessert. Just will need a lot less of everything.

i love hosting and i love feeding a crowd.
i wish i could have a big gathering.
hopefully, i'll be able to host easter, next year... but i'm not holding my breath.

We're staying home both Christmas Eve and day just us.
Christmas Eve we're ordering fish from a local Italian place.
Christmas day we're making filet mignon, mashed potatoes, spinach and garlic and sweet potatoes for my daughter who requested it.

all I can think about it arroz con gandules now.
seriously, these menus sound delicious.
I love taco bell and all the Italian fishes.
I have no idea what I'm making. Could do takeout. Can go either way this year.

Do you make your own fried calamari? I was thinking of having that but it's a PITA to make and I feel like it never reheats right. Any suggestions?
It's just us and my parents. I think I'm going to do Filet Mignon and lobster tails with asparagus or brussel sprouts and roasted potatoes. I think I'll mix in some other seafood too...baked clams, shrimp cocktail, scallops wrapped in bacon. Maybe I'll do seafood salad too. Or maybe a lobster bisque? We usually have that at my DH's aunt's house and it's so good. I'm sad we won't be with them this year so I'm trying to incorporate some things they do but they get the whole thing catered.

I love Dominican potato salad.
We're also doing a pernil
Rice and pink beans
Macaroni salad (American style)
Pastelon (Puerto Rican lasagna...so good)
Salad
Dessert will be probably brownies and some cake..
It will be us, my parents, brother and my sister and their families.

So do I! When I was pregnant with my son I got obsessed with it. I never liked spicy food til I was pregnant with him and then that was all I wanted to eat.
We're always busy with last minute stuff on Christmas Eve so my aunt usually cooks but because of Covid, we won't be going over there. So Taco Bell it is.

That's my plan for New Year's eve, I am trying to decide if it is overkill to get shrimp cocktail for just me.
For Christmas eve, we are always alone & are making our usual fondue.

Oh yes!
I didn't realize they took that much off the menu! They're always are taking nacho fries off the menu to mess with me.  They're not a regular menu item.

I hosted Christmas Eve and was nervous cause I haven’t hosted in such a long time. This is what I made...
- Stuffed Mushrooms
- Scalloped Potatoes
- Christmas Rice Pilaf
- Brussels Sprouts with Balsamic and Cranberries
- Beef Short Ribs and Gravy
- Slow Cooked Pernil
- Cheddar Biscuits
- Cranberries and Brie Wreath
- Christmas Tree Pesto Breadsticks
Everything came out pretty good and will be saving all the recipes for next year. I did have a little trouble with the balsamic glaze though and I think it was cause I cooked for a bit too long.
