What’s for dinner?
I really did not feel like cooking despite having tons in my fridge to cook.
I did make a nice Thai coconut chicken soup (Tom Kha Gai/Kai) with mushrooms and ate that for lunch.
Then I said f it and went to Lidl and got some Tiramisu and this frozen chocolate cream dessert. I also got a really nice Joop rug. Love Lidl.
So dessert was my dinner

Oh I did the Kitchn’s recipe for that a few weeks ago. It was delicious. I also learned how to do caramelized onions really quickly after watching a YouTube video.

Miso chicken is awesome! Miso Chicken
I did chicken recently and let it marinate in lemon juice, Caesar dressing, some parm cheese, a splash of olive oil, and some Dijon. I let it sit for a few hours and then grilled it. I made a big batch for the week.

It is really annoying as I will eat almost anything. They don't care for pork that much. We did have pork sausages last night. I made them with eggs and toast for a breakfast dinner. I buy cheese and parsley sausage and pork chops. They will eat it but are not thrilled.

I'm using Half Baked Harvest recipe. I absolutely love her blog and cookbooks, such great comfort food.
Caramelized onions are life!!! My favorite!!!

I'm trying to find the recipe but I made a Chicken Enchilada bake recently that was good - and easy. I felt the same way as you did - we always have chicken the same way - fajitas, grilled, chicken and broccoli are the common ones we made.
But this just requires cheese, chicken, black beans, enchilada sauce and rice (ok, so you might not have enchilada sauce) and it's a just put it in the oven and bake meal.

We also make the Stovetop Bruchetta Chicken - if you have chicken breasts, mozz cheese, chicken stovetop and diced tomatoes - it's easy but different.

What’s for dinner?
I only really eat chicken and seafood so I have a zillion chicken recipes. One of the picky eater chicken recipes I do is chicken souvlaki- cube the chicken, grill and serve with pita, tzatziki and Greek salad.
Also Buffalo pulled chicken sandwiches- shredded chicken with buffalo sauce on nice brioche rolls. Then I get a bag of cole slaw mix and instead of Mayo I mix with blue cheese dressing and put on the sandwich.

I understand - we typically cook for DH and I and give the kids something different.
DH is pickier than the kids with some things so it is a balance of what they all like or try to get as much together for a meal for all. Then they complain we eat the same things over and over. Well duh.....

Also a shoutout to one of my favorite fall things- iavarone pumpkin ravioli. I make it with brown butter and sage and sprinkle some crispy bacon on top.
So good. I actually hate pumpkin but this I love.

Hubby and I love greek food. Will get for ourselves. Picky #2 would only eat the pita and chicken but an option.
Have made pulled sandwiches and that has been a hit. Picky #2 won't eat coleslaw so I make it for hubby and I. I will have to try with the BC as we both like that. Picky #2, no lololol
