Paradisus in Riviera Maya last February - loved it. Clean and a great selection of restaurants with good food.
Ritz Carlton in Montego Bay Jamaica October 2006. Gorgeous and a very easy trip for a long weekend. They offer a "keys to paradise" plan which covers your meals and drinks.
ETS: Forgot about Rendevous in St. Lucia. Gorgeous atmosphere. Couples only. Beautiful rooms. Food was "eh". Loved the island, the staff, the place, but food to me is a huge part of vacation, so I wouldn't necessarily recommend this place - only 2 restaurants.

We stayed at the Royal Solaris in Los Cabos. We really enjoyed it but, it was about a $30 cab ride to downtown San Lucas where the nightlife was.

We went to Couples Negril in Jamaica in December. LOVED IT! We stayed at Couples Swept Away on our HM 2 years ago, and loved that too. I cannot rave enough about the Couples chain (all inclusive including water sports).

We've stayed at the Paradisus in the Maya Riviera as well, and LOVED IT!!
We've also been to Sandals St. Lucia, Sandals Antigua, and the Paradisus in Punta Cana.
Besides St Lucia, my favorite was the Mayan Riviera!

myself and about 5 or 6 other girls on her went to the RIU Palace in Cabo san Lucus
I got a great deal, it was so fun, new hotel and a $10 cab ride in to town

We stayed at Sandals Regency Resort and Spa in St. Lucia for our HM in November. Loved it!

Sandals. We love them, We have been to Jamaica Ocho RIos and St Lucia Regency. Both great, St Lucia much better.
