Just made the yummiest Low Fat Banana Bread
Makes 2 DELICIOUS Loaves!!!!
2 1/4 c. flour 1 2/3 c. sugar 1 tsp. salt 1 1/4 tsp. baking powder 1 1/4 tsp. soda 2/3 c. skim milk 1/2 c. plain nonfat yogurt 2 tbsp. vegetable oil 2/3 c. egg whites or egg beaters 1 1/4 c. mashed ripe bananas 2/3 c. chopped nuts
Heat oven to 350 degrees. Pam loaf pan. Measure all ingredients into large mixer bowl and blend 1/2 minutes on low speed, scraping bowl constantly. Beat 3 minutes on high and pour into 2 pans. Bake 50 minutes to 1 hour or until wooden pick inserted in center comes out clean. Size: 2 (7 x 3 inch) loaf pans.

Banana Bread Serves 8 Ingredients Cooking spray 2 C all-purpose flour (I use 1C wheat; 1 C white flour) ¾ C sugar 2 tsp baking powder ½ tsp baking soda ½ tsp salt 4 large ripe bananas, mashed ¼ C skim milk 2 egg whites 1 tsp pure vanilla extract Optional Addition(1 C fresh or frozen raspberries or ½ C apple sauce)
Preparation Heat oven to 350?. Coat an 8” loaf pan with cooking spray. In a bowl, combine flour, sugar, baking powder, baking soda, and salt, whisk to blend. Make a well in center; set aside. In another bowl, combine bananas, milk, eggs, and vanilla; fold in raspberries of other optional addition. Pour batter into center of dry ingredients; fold together until combined. Do not overmix. Pour batter into pan; bake 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan; cool completely. Slice before wrapping individually.

I made this last night!!! And YUM!!!! However i added a cup of Choco Chips it was delish!!!

I always add different things each time...blueberries, raspberries, dried cranberries, etc.
