What are your favorites to serve when preparing a nice dinner?

Mine, asparagus with shallots or hollandaise sauce, stuffed artichokes or broccoli baked with breadcrumb. Oh, broccoli rabe too...

some of my faves:

broiled portabellas w/a slice of fresh mozz & tomato and a basil leaf in betweeen...w/balsamic vinegar reduction (they're really easy to make!)

sauteed spinach w/garlic and a tiny bit of butter & lemon juice

steamed broccoli w/butter & parm cheese (works well w/cauliflower too)

sauteed asparagus w/sesame seeds, a little bit of oil & soy sauce or terriaki

cous cous (plain or you can throw just about any veggie in there)

eggplant, breaded w/just spray oil & breadcrumbs & baked in the oven

homemade mashed potatoes

baked red potatoes w/onions, mushrooms and fresh spinach mixed in
