grilled chicken question - pls help!
I think I must be dumb. I can't grill chicken on the stove. I made fajitas last night and put 1 tbsp of vegetable oil in the skillet and let it get hot. Then I put my cut up chicken strips in on medium heat and let them cook. They got like whiteish colored first and then sort of gray before they browned. They browned on one side and then the other side wouldnt brown -- and after about 10 minutes when i took them off they were dried out...... help me improve my strategy! lol I love chicken and pasta and fajitas so I really want to figure out what the heck I'm doing wrong! TIA

Cook the breast whole, do not cut up.
Cook on one side until the breast is about 80% cooked then turn it over to finish.
Take off grill pan, let sit for 5-7 minutes to let the juices redistribute THEN Slice it up.

hmmm... ok..... so I shouldn't get chicken strips from the butcher? I've never heard of that before

I cook chicken on the stove in a grill pan instead of a regular skillet... It's more like bbq. I don't like that when you cook them in a regular pan that it is cooking in all of the fat, etc.
And I don't cut them into strips until after they are cooked...

The lack of browning might be from a lack of oil. When I am doing chicken like that I spray the top of it slightly with olive oil Pam while the bottoms are cooking. The olive oil gets it nice and brown when its flipped!

and I saw on a cooking show to make sure your chicken is patted dry with a paper towel first...if its too wet it wont brown nicely.
