EVOO has a low smoke point, so it burns faster, but any oil will splatter. how much oil is in the pan?

eta: if you are deep frying use vegetable or canola oil, if you're only pan/shallow frying (like a very thin coating), EVOO is fine.

You can use a deeper pot rather than a frying pan to help with the splatter.

dr oz on oprah the other day said that you hsouldn't fry with olove oil use another oil b/c the hi temperature takes away the beneficial properties. I'll have to check the website now

Healthy oils
Dr. Oz says there are many healthy oils, such as olive oil, sesame seed oil, flaxseed oil, grape seed oil and canola oil. To maximize their health benefits, Dr. Oz says good oils need to be used properly. "Keep it in a dark bottle or in your refrigerator—that's how to keep it healthy so it doesn't go rancid," says Dr. Oz. "Healthy oils are delicate, you have to treat them delicately."

Dr. Oz also says overheating good oils during cooking can damage them. "Don't cook the oil, cook the food," says Dr. Oz, "which means put a tiny bit of oil in the pan, put the food in the oil and then put the food with the oil on it in the pan—that way the oil is preserved. It doesn't heat up and it doesn't get damaged by the heat."

Frying with Olive Oil is a bit of a waste for most foods. And it does have a lower smoke point. But the splattering is caused by water in your oil. Make sure your pan is COMPLETELY dry before you put oil in it. And once it is in there try to avoid dripping water into it because it will pop, hiss and splatter.
