What type of dishes you make that last more than one day?

Roasted Chicken - eat one day, the use leftovers another day for fajita's or chinese stirfry

Lasagna or Baked Ziti ... can always freeze also

Soups

Anything with ground meat usually will reheat well - chili, taco, picadillo, meatloaf, etc ...

Baked Chicken - pieces on the bone with potatoes and root veggies ... bake until done. Can reheat.

chili....
we eat it with tortilla chips then freeze the leftovers and eat it the same way or over a baked (microwaved) potato or even fries! White rice will do the trick too

any kind of pasta....I just make the whole box and we eat it for lunch or later in the week (or it's Alys' meals for a few days).

BBQ chicken....the leftovers become a grilled chix salad, a wrap, chicken & cheese quesadillas, you can mix it up into chicken ala king (chix w/ cream of mushroom rice)

we always have a bag of popcorn chicken....we eat it over a salad or with fries for a "junk food dinner"

breakfast food...pancakes and waffles freeze SO well.

chicken cutlets....so many things....chicken parm, served with rice & beans, over a salad or in a wrap.

BEANS....I make homemade black beans and FREEZE them....we eat them alone with rice or as a side dish to BBQ steak, chix, burgers or hot dogs

Flank Steak, we eat half one night with rice, then cut the second half into slices another night for fajitas.

Pot Roast, Braised Lamb (in the slow cooker) Spaghetti Bolognaise, BBQ Chicken...
