Vegetarian/Vegan recipes (that DH will eat too!)
I'm trying something new and after reading "Skinny B!tch" and learning about the unhealthy aspects of meat and dair, I've decided to try a more vegetarian lifestyle.
Granted, I'm sure I wont be perfect but to star, does anyone have any good recipes for lunches or dinner that my still meat-eating DH wont whine about

my husband isnt a big veggie man either but he loves Lentil soup and I make a really good white bean, escarole and pasta dish that he LOVES!!

Butternut squash & veggies w/ Israeli cous cous
Other meals we eat regularly:
- Bean Burritos - take out, frozen from the grocery store or home-made (veggie refried beans - watch for the lard, salsa, avocado, lettuce, etc.)
- Indian food - TONS of veggie options (our favorite is Punjab Choley from Trader Joe's)
- Chili - I'm experimenting with new recipies using barley or lentils, beans and veggies
- Veggie burgers & fries
- Veggie stir fry with rice or soba noodles
- Pasta with sauce & garlic bread
- (fakin)BLT pasta - pasta with tempeh bacon (delicious and way healthier than regular bacon - find it at Whole Foods or in some grocery health-food sections), cooked arugula & cherry tomatoes
- Veggie sushi
- Bean salad
- Falafel - usually fried, so not so healthy, but Fantastic Foods makes a tasty mix that you can make at home and bake instead of fry.
- Seitan - sometimes called "wheat meat," you can buy it premade or make it at home (it's pretty easy) and use it instead of meat. I like to marinade it and cook it like a chicken breast and serve with asparagus and potatoes.
- Veggie pizza. I make my own crust and we cut up veggies and throw it together, or you can buy pre-made ones (Amy's brand has a kick-@ss cheeseless pizza)

well not necessarily vegetarian but healthy if he'll try it..
you can substitute pasta with shredded butternut squash. Nick even likes it!
shrimp sciampi ww style is good- it is not made with butter, but cornstarch and chicken broth.. delicious!

Baked Cauliflower. Its a big hit in our house. Lightly steam some cauli, put it in a baking dish, cover it with watered down mayo with some grainy mustard in it. Cover with breadcrumbs with some cheese in it, bake at likr 350 for 20 minutes, DELISH.
