i have a few late nights at work coming up, so i'm gonna make some meals ahead of time adn freeze them. i want to do baked ziti... should i cook it through and then freeze it??? or just put it all together and freeze it uncooked, and then cook it the night i want to eat it?? i'm not sure if cooking it and then freezing it and then cooking it again would dry it out too much??? any advice? thanks!

Re: freezing baked ziti???
I usually just put the ziti, uncooked in the frig until the day it needs to be cookied. Usually it's in there a day or two at the longest.

Don't cook before freezing. The noodles get like rocks! Just prepare, freeze and defrost before cooking, if you can. If not, it can be cooked frozen, just do it on a low heat for over an hour.

I agree. Put it all together and then freeze it, but don't cook it until you're ready to eat it.

not a freezing tip, but a reheating tip...
if you sprinkle some water on the pasta before you put it in the microwave, the pasta stays soft. I did this with ziti earlier in the month and it tasted fresh out of the oven - not dried out at all.
