New Chicken salad alternative
I don't believe I've reinvented the wheel but in my quest to avoid sandwiches because I am sick of them, I did the following:
I took chicken from a rotisserie chicken (no skin) and mixed in half of an avocado, some celery, salt, pepper, and lemon juice (to avoid browning)...it was nice and creamy and an alternative to mayo that is healthier...

cut up purple grapes is also really really good in chicken salad.

i was up in Mass and they do chicken salad with Cranberry sauce. It sounded weird but my bf (who;s from Cape Cod) said it was good adn we split a sandwich...YUMMY!!

I love these ideas..thanks! I mashed in the avocado with the chicken, using it as I would mayo.
