or suggestions on how to make it lower in fat, but still yummy?

yes-spray a tin with cooking spray... use half a cup of egg beaters and coat eggplant cut the circular way with and then use bread crumbs sparingly. Bake, laying flat in the oven, on 350 for about 10 minutes on each side (or until cooked). Take out and stack, with a little cheese and sauce on each layer and bake again until cheese is melted..enjoy! I can pull out my recipe if you'd like, FM me..this is the jist, however.
