Creamy Spinach-Artichoke Mini Pizzas
4 oz. cream cheese (from 8-oz. pkg.), softened 2 tablespoons sour cream 3/4 cup Green Giant® Frozen Spinach (from 1-lb. bag), thawed, squeezed to drain* 1/2 cup artichoke hearts (from 14-oz. can), drained, patted dry with paper towels 1 (10.6-oz.) box Pillsbury® Refrigerated Garlic Breadsticks 1 oz. (1/4 cup) shredded Parmesan cheese
DIRECTIONS 1. Heat oven to 350°F. In medium bowl, mix cream cheese, sour cream, thawed spinach and artichoke hearts until well blended, breaking up artichokes during stirring. 2. Unroll dough into 1 large rectangle. Spread garlic mixture from box evenly over dough. Separate dough into 10 breadsticks. Reroll each breadstick, coiling dough into spiral shape with garlic mixture inside; place 2 inches apart on ungreased cookie sheet. 3. Starting at center, press out each coil into 3 1/2-inch round (edges will curl up slightly). Spoon and spread cream cheese mixture on top of each round. Sprinkle with cheese. 4. Bake at 350°F. for 17 to 22 minutes or until cheese is melted and edges are golden brown. Immediately remove from cookie sheet. Serve warm
Parmesan Spinach Roll-Ups
1 egg 2 (10.6-oz.) pkg. Pillsbury® Refrigerated Parmesan Breadsticks 1 (1-lb.) bag. cut leaf spinach, thawed, squeezed to drain* 2 oz. (1/2 cup) shredded mozzarella cheese 1 teaspoon lemon juice 1 tablespoon Pillsbury BEST® All Purpose or Unbleached Flour
DIRECTIONS 1. Heat oven to 350°F. Lightly grease cookie sheets or use ungreased baking stone. In medium bowl, combine egg and contents of both containers of Parmesan spread from breadsticks; beat well with wire whisk. Add spinach, cheese and lemon juice; mix well. 2. Sprinkle work surface with flour. Unroll dough onto floured surface. Separate into 20 breadsticks. Press or roll each breadstick to form 7x1 1/2-inch strip. 3. Spread each strip with about 1 tablespoon spinach mixture. Roll up, starting at shortest end; pinch end of dough to seal. Place rolls, cut side up, 3 inches apart on lightly greased cookie sheets. 4. Bake at 350°F. for 20 to 25 minutes or until golden brown. Serve warm.
*I found these two on the Pillsbury site, what I might do is take the spinach/artichoke mixture from the first recipe and do the following to make a pinwheel with it using the crescent roll dough:
1 Heat oven to 375°F.
2 Separate dough into 4 rectangles. Firmly press perforations to seal. Spread each rectangle with about 3 tablespoons spinach/artichoke mix.
3. Starting at shortest side, roll up each rectangle; pinch edges to seal. Cut each roll into 6 slices. Place, cut side down, 1 inch apart on ungreased cookie sheet. Brush with beaten egg white.
4. Bake at 375°F. for 12 to 15 minutes or until golden brown. Serve warm.
