what can i do with chicken thighs?
Hi all, I'm new here, and have been lurking aloing reading all these great recipe posts, but i havent seen one about Chicken thighs. We love them here , but im getting tired of making them the same way all the time, which is marinated in bbq sauce and then thrown on the grill. Can anyone offer easy suggestions that are also tasty? Thanks

if you want to BBQ it you can always baste it with Hot Sauce instead of BBQ sauce

Baked Mushroom Thighs
8 chicken thighs 1 (10.75 ounce) can condensed cream of mushroom soup 1 (10.75 ounce) can milk 1 teaspoon dried parsley 1/2 teaspoon onion powder 1 cup dry bread crumbs 2 tablespoons melted butter 1 teaspoon cornstarch
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). In a medium bowl combine the soup, milk, parsley and onion powder. Mix well. Place bread crumbs in a shallow dish or bowl; dip chicken thighs in soup mixture, then in crumbs, and place coated pieces in a lightly greased 9x13 inch baking dish. Drizzle with melted butter and bake at 350 degrees F (175 degrees C) for 45 minutes, or until chicken is nicely browned and cooked through (juices run clear). Meanwhile, place remaining soup mixture in a small saucepan over low heat. Stir in cornstarch to thicken, and cook over low heat until heated through. Use this as a sauce when chicken is done.

I do this recipe with breasts but thighs would be yummy
Take chicken breasts put in a baking dish. Cover chicken with 2 or more cans of diced tomatos, Sprinkle spices of choice over the mixture.
Bake at 350 degrees until chicken is done. Serve over rice or noodles

I put sticky chinese sauce on them, grill them and eat them like yakitori, with veggies and sticky rice.

ingredients
1 1/2 cups fresh bread crumbs 1 1/2 cups freshly grated Parmesan cheese (4 1/2 ounces) 2 large eggs, lightly beaten 1/2 cup grated Provolone cheese (1 1/2 ounces) 1/2 cup coarsely chopped basil 1/4 cup coarsely chopped flat-leaf parsley Finely grated zest of 2 lemons 1 tablespoon finely chopped rosemary 16 boneless chicken thighs with skin (about 5 ounces each) Salt and freshly ground pepper
directions Preheat the oven to 450°.
In a medium bowl, combine the fresh bread crumbs, Parmesan cheese, eggs, Provolone, chopped basil, chopped parsley, lemon zest and rosemary.
Set the chicken thighs, skin side down, on a work surface and season with salt and freshly ground pepper.
Mound 1/4 cup of the herb-and-cheese filling on each thigh. Fold the sides of the thighs over the filling to enclose it and tie each chicken thigh in 2 or 3 places with kitchen string.
Season the chicken thighs with salt and pepper.
Arrange the stuffed chicken thighs on a large, rimmed baking sheet and roast for about 35 minutes, or until golden brown.
Let the chicken rest for 10 minutes, then discard the strings and serve.

When I buy boneless, skinless thighs I cut up the meat and use it for shish-kabobs, jambalaya, soup, chicken chili. If it has bones, then I make baked BBQ chicken.
Thighs are so much juicier than breasts and they take marinades really well.

Thank you all. I love the fact that thighs are so much jucier than boneless breasts are . I have made cacciatore in the crockpot totally awesome. I also have made them bbq. I'm going to give them all a try at one time or another. I'll let you all know how I do! Thanks

We made homemade pesto and brushed it on the chicken thighs. It tastes really good when it comes off the grill!

what we do is soak them in milk or egg whatever your preference, then bread them like chicken cutlets and bake them in the oven.

ok you are all making me hungry ! I use cooks.com to locate recipes. I know somwone mentioned it already but an easy favorite for me is the Baked BBQ chicken - for really easy clean up I line the pan with aluminum foil.

on the real simple website, i saw a recipe that i use all the time- with thighs.. i just cook the chicken longer-about 30 minutes longer. oh, and i also use parsnips along with this- i was very excited to have discovered the parsnip. and ive never made the broccoli...
Roast Chicken with Butternut Squash 1 teaspoon olive oil 1 4-ounce boneless, skinless chicken breast 1/4 teaspoon black pepper 1/2 cup sliced yellow onion 1/2 cup diced butternut squash 1/3 cup low-sodium chicken broth 2 fresh sage leaves, chopped 1/2 cup broccoli florets
Heat oven to 400° F.
Heat the oil in a skillet over medium-high heat. Rinse the chicken and pat dry with paper towels. Season the chicken with 1/8 teaspoon of the pepper and cook until golden brown on each side, 2 to 3 minutes. Transfer to a plate.
Add the onion and squash to skillet and cook, stirring occasionally, for 2 minutes. Add the broth, sage, and the remaining pepper and bring to a boil. Return the chicken to skillet. Transfer to oven and cook until the squash is tender and the chicken is cooked through, about 15 minutes.
Meanwhile, pour about 1/2 inch of water into a small saucepan and bring to a simmer over medium-high heat. Fit a steamer basket in pan. Place the broccoli in steamer, cover, and steam until just tender, about 3 minutes.
Transfer the chicken and vegetables to a plate and serve with the broccoli.
Yield: Make 1 serving
