take out from the library or buy it, the book the unoffical guide to disney. it literally prices everything out for you, from staying inside, to staying outside to cheapest times of the year, right down to how much each food item costs, etc.
Also, some really good sites to check out for discounts etc: mousesavers.com wdwinfo.com allears.net
on most of those,if not all, you can sign up to be emailed when there are discount codes for hotels in the area.
If your DH or yourself is active military you can stay at shades of green for really cheap and get discounted park passes
we go to disney a lot, and about 2 years ago we went for 8 days 7 nights. it cost aprox $800 for the two of us to stay on property at the pop century, all park passes and food for the entire trip. It was great. I had gotten a discount code for the meal plan to get it for free so lunch dinner and a snack everyday were paid for, and the hotel and park passes were a package deal and I found another code for that. I booked the hotel and park pass package 1st then found the meal plan code and added it to my package afterwards. its rare they give it out for free anymore, but check those sites often!
Also, go to dinsey's website and sign up for their free video and emails. Sometimes they mail you a postcard to book a trip with an insane discount code.
I think disney is offering a free day on your birthday, and there was another promotion, buy a certain amount of days, get a few days for free. check their site for that one.

they are now running the stay on property and get the Disney Dining plan for FREE... you will save a lot this way and they're dining plan is good, IMO. of course, it's for selected dates, but i think a good part of the summer is part of it...
