Thin Chicken Breast???

I'm defrosting it, what should I do with it? so clueless...I'm running out of ideas.

Don't want to do:
Chicken Parm or
Fajitas

Get a slice of ham and a slice of swiss, roll it up, bread it and make chicken cordon blue...

I have a hard time rolling so i fold mine in 1/3's - my "glue" is a little dijon mustard. i put a little on the outside too then bread it and bake it folded side down.
I think the mustard gives a little extra taste without being too overpowering.

I make this a lot w/thin chix cutlets.

I cut the chix into strips cook them w/sundried tomatoes, chopped spinach, garlic and mix pasta. I than add diced mozzarella cheese and cover for a few minutes so it melts.
Last night I added sausage.

Easy, quick and delicious.

take a piece of bacon, 2-3 pieces of asparagus and a cheese of your choice and place in center of chicken. roll chicken up and dip in egg wash and then italian seasoned bread crumbs. Use a toothpick if necessary and bake until chicken is cooked through.

So many options!!

Dump a can of creamy mushroom soup/ or half with cream of chicken soup and bake or put in crock. Can be paired with rice or egg noodles.

You can dump a packet of italian dressing mix on top and a 1/4 cup of wine and put in a crock pot or bake in oven....delic!

You can always stick a toothpick in to keep them together!
