Way too quiet here...
I <3 my '09 gals and am happy the NW board on LIW is still pretty active, but where is everyone???
How am I ever gonna get my post count up on LIF if no one posts on here? 
BTW: does anyone want to ship me or bring me some rainbow cookies. Apparently they don't make them anywhere in NC and I'm dying for some!!!!! I'm not sure I can make them myself. I'm scared or something...

I can't find them ANYWHERE!!!!!!!! I'm going to head into town a little later and see if the italian bakery in town has anything like them... I know I should just do it myself, but I want instant satisfaction!!

Not instant gratification BUT try to see if you can order them from this company. I go every Christmas to pick up some cookies. LOVE their rainbow layer cookies!

I found some actually very good italian cookies at a local supermarket yesterday that have somewhat satiated my craving for now. No rainbow cookies, but plenty of sandwich cookies with apricot jam and the little chocolate with sprinkles on the side...

They're not rainbow cookies, but they're pretty good.
I do not understand how people from North Carolina do not know about or want or enjoy rainbow cookies?!??!?!? It's the first time I really feel like it's backwards down here...

I'm guessing my mother did not scope out that situation before moving down there. I'll have to ask her if she knows of any places to get them. She's in Shallotte. Is that near you?

I had to look up where Shallotte is because I'd never heard of it! It's way down near the shore & Wilmington, almost near the SC boarder! I bet it's beautiful down there.
I'm probably about 3 1/2 - 4 hours north of there, just outside Raleigh.

I talked to a friend of mine about making them and we're gonna have a baking day at my new house once we move in (which is the end of July). I can't wait! Someone on LIW gave me a recipe for them she swears by!

Roma's in Cary on Harrison St has 3 layer cookies There are a bunch of Italian bakeries here. Also in downtown Apex by Anna's Pizza is another bakery that has them

Every time I try to go to Roma's, it's closed!!! I'm going to give them another try today. Thanks!!!
I never go into downtown Apex, but will soon be moving to West Cary really close to there and imagine I will -- I will definitely keep it in mind.
Where were you 3 weeks ago when I was having this insatiable craving??
We did go to Bosphorous (the Turkish place) on Harrison for dinner the other night and their food is fabulous! How long have you lived around here?

I had never seen a rainbow cookie, and still maybe only tasted them once, before I moved from MD to LI. We had the chocolate drops and jam sandwich ones, but not rainbow.
