Tonight I am making stuffed peppers in the crockpot!


-1 pound ground beef (i use 90/10)
-I bag of brown rice (the kind that cooks in ten minutes, it makes one cup cooked total)
-1 can of black beans
-1 16 oz jar salsa


Brown the beef-add rice, salsa, beans and mix-simmer for about 5-10 minutes. Scoop the mixture into peppers (i use green bell peppers, slice the tops off, scoop out seeds/pulp). You can season the mixture as well, i just use salt and pepper.

Cover the bottom of the crockpot with tomato sauce and water mixture (i just shake up some water and tomato sauce, add just enough to coat the bottom of the crockpot).

Place peppers in crockpot and set on high for 4 hours.

They are usually done at 3.5 hours. This makes anywhere from 4-6 peppers depending on how big they are. I have 5 in my crockpot now at 7 points each. If you make larger peppers, i guess they'd be about 8 points or so.

They are realllly good, been making them forever!

These peppers were delicious! They just needed a little more spicing up than I expected. Now I know next time to kick them up another notch. Thanks for sharing the recipe!

I make a very low point recipe that I picked up from the ww site.


Take Chicken Breasts - that are off the bone and skinless

Green and Black Olives

Capers and some caper juice

Red cooking wine about 1 cup

Red wine Vinegar about half a cup

Combine in crockpot and cook for 5 hours on low

Chicken will shred so easy -

Make brown rice or pasta on the side or eat a lone

Slow Cooker Chicken Caciatore

1 LB Chkn Thighs cut in to bite size pieces
1 C mushrooms (Sliced)
1C green peppers, sliced
1C chopped onions
1 Med clove garlic
1 Tbsp Tomato paste
14 1/2 oz canned crushed tomatoes
1/4 c red wine (dry)
3/4 tsp oregano
3/1 tsp salt
1/4 tsp pepper

Place chicken in a 3- to 5-quart slow cooker. Add mushrooms, green pepper, onion, garlic, tomato paste, tomatoes and juice, wine, oregano, 1/2 teaspoon of salt and black pepper.

Cover slow cooker; cook on high heat for 5 to 6 hours or on low heat for 6 to 8 hours. Taste just before serving and add remaining 1/4 teaspoon of salt if necessary. Yields about 1 cup per serving.


Makes 4 svgs, 5 pts Plus each

Crock Pot Chicken Taco Chili
Gina's Weight Watcher Recipes
Servings: 10 • Size: 1 1/4 cups • Old Points: 3 pts • Points+: 5 pts
Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g • Protein: 16.9 g

1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce
10 oz package frozen corn kernels
2 14.5-oz cans diced tomatoes w/chilies
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder

24 oz (3-4) boneless skinless chicken breasts
chili peppers, chopped (optional)

1/4 cup chopped fresh cilantro
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

Turkey Chilli

I made this in the recipe builder
It came out to 2 pts per cup but made about 30 cups, you could halve the recipe and make less

2.5 libs ground LEAN turkey (93/7)
24 oz canned tomato sauce
1.5 cups chopped onions (frozen is fine)
1.5 cups frozen pepper strips (chopped)
2 cans (15 oz each) kidney beans
5 cups crushed tomatoes (canned)
1 packet chilli seasoning


cook on low 8 hrs
delicious!

Just wanted to say THANK YOU, I made this yesterday and they were so yummy! The only thing I did diff was I added salt, pepper and garlic to the sauce in the bottom and just put a tbs of water.

I made white chicken chili tonight---yum!

1.5 lbs boneless chicken breasts
2 cans (15 oz each) navy or northern beans
1 can (4 oz.) green chilis
1 can cream of chicken (98% fat free)
1 can chicken stock (15 oz)
1 can hominy or white corn (14 oz)
1 envelope of taco seasoning

Place chicken breasts on bottom of crock pot then put beans and corn on top. In a bowl, mix cream of chicken, chicken stock, chilis and taco seasoning. Pour mixture over the chicken, beans and corm. Cook on low for 8 hours or high for 6 hours. Top with sour cream, cheese or nothing at all in the end. Sooooo incredibly delicious!!

Made this tonight. It was delicious. Only thing I did different was put more garlic and used chicken breasts. The meat fell apart and was really really good!!
